From a Passed Down Italian Recipe - My Mom's Splendiferous Gluten Free Spaghetti

     Family recipes are fun to pass down, and this one comes from my mother.   When you taste it, you'll know why she calls it Kadie's splendiferous spaghetti!  The perfect blend of spices in this sauce is incredible. 


   Even my son-in-law the one whose father was born in Italy loves it.  This sauce simmers for 3-4 hours.  I did cook it for less one time, and it still came out great. My husband's mom adds olives to her sauce, and so that's my own addition to this  outstanding spaghetti recipe.

   This recipe also works great for a vegetarian spaghetti sauce which I have done several times. You can sauté some zucchini and summer squash and add it at the end along with any other vegetables you'd like to throw in. 

Often I start the sauce on the stove and then crock it for the rest of the day.


Kadie's Splendiferous Spaghetti


1.  Chop veggies:  
(1)  Chop up 1 onion 
(2)  Mince 3 cloves of garlic or throw them in the processor with the onion
(3)  Chop up ½ of a green pepper (sometimes I put the whole thing in)
(4)  Dice 2 stalks of celery. 
(5)  If you like mushrooms, slice up ½ to 1 cup of them. 
(6)  Optional: Our modification was to add 1 can of chopped olives.

2.  Put spices in a pinch bowl: 1 T of fresh oregano or 1 tsp.dried, 1 tsp. of dried rosemary, 2 tsp.  of salt, 1-2 t basil (or 1-2 T fresh basil chopped), 2 tsp. Italian seasoning, 2 T of fresh parsley, 2-3 T of brown sugar,  1/2 tsp. black pepper, and 1 bay leaf.


3.  Cook meat and vegetables: Put 2 T of olive oil in a stainless skillet and when it warms up, add the onion, garlic, celery, green pepper, and mushrooms and cook until soft. Add 1 pound of hamburger and cook until browned.

4.  Make this fantastic sauce:
(1)    Now add 2 cans of whole tomatoes and 2 cans of tomato sauce and  her recipe calls for ½ cup of red wine, sometimes I add it; sometimes I don't--and this spaghetti still comes out amazing. The red wine brings out the subtle flavors in the sauce.  

(2)  Note:  In my mom’s recipe she adds 2 large cans of plum tomatoes and 1 large can of tomato paste, but I didn’t have it, and it came out delicious using tomato sauce instead—maybe try one of each.

(3)  You can add 2 more T of olive oil now if you like. 
(4) Pour the spices from the pinch bowl in and let the sauce come to a slow boil, and then put it to simmer for 3-4 hours. If you like at this time, you can put the whole thing into a crock pot and forget about it until supper.  Taste and made any seasoning adjustments!

My mom’s notes: She likes to use fresh herbs whenever possible, but don't forget you'll use a bit more. 1 T fresh = 1 t dried.  You can add or decrease spices and sugar according to the flavor you like.

Discussion with College Students: What is the Church?

          When you hear the word church, what do you think of?  When I was growing up, I only heard it used in relation to a physical building with a cross on top of it.  It's interesting that the word church in Greek (I learned in college that the New Testament was originally written in Greek) is ekklesia which means the gathering of the called out ones.  

    On Friday night last week we  read a chapter called Meeting from the book Lessons for New Believers published by Living Stream Ministry.  We read several chapters out of this book last year with a group of students, and we all enjoyed the simple way that many profound truths were conveyed.    

     We all liked this illustration:  "We need to meet just as fish need water, birds need air, and man needs to breathe... The life within us wants us to flock together with other believers, to assemble with I have other sheep ....I must lead them also.... there shall be one flock' (John 10:16).  The flock is the church...The sheep's life in us demands that we flock together and assemble" (Lee, Witness. Lessons for New Believers. Anaheim: Living Stream Ministry, Print).


    We saw that every kind of life in God's creation has characteristics, and one of the characteristics of the life of God is it likes to gather. Sometimes because of our self-reliant culture we may think individualistically about our salvation, but God's goal is to redeem us so that we can all be a part of the church.  

  We all saw this clearly when we read  Acts 20:28 which says:   'Take heed to yourselves and to all the flock, among whom the Holy Spirit has placed you as overseers to shepherd  the church of God, which He obtained through His own blood.'  We need to pay attention to this flocking life inside of usthat likes to get together!

From the Land of the Cactus

   Last week my husband and I came back from visiting my father who lives in Sun City, Arizona.   Our winters are generally wet and cold, and my husband and I were looking forward to thawing out a bit!  There are a lot of things in Arizona that are unique besides the fact that it's a desert and we live in the lush Northwest!  As I was there this time, I was collecting some pictures for an ABC desert book that I am planning to make for my grandkids.  Here are some of the things we have found interesting there:

1.  Cactuses have beautiful flowers!

I zoomed in on the flowers of a neighbor's cactus.


2.  Rabbits run wild in Sun City.  Here is a baby bunny that lives in my father's cactus.

3.  People in Sun City can drive golf carts on city streets.


4.  You can often spot a lizard sunning itself in the yard. 

5.  Quail are everywhere!  I took a picture of this one perched on my father's roof!  

In the spring time it is very common to see a mother and father leading their babies across a yard or even across the street.  This is a picture of some baby quail by the side of a neighbor's bush.

6.  Cactuses come in a lot of shapes--this is called a globe cactus. 


We learned that it takes between 50-75 years until a cactus grows one arm. 

This is a picture of my husband checking out what's called the ribs on a dead saguaro in the Desert Awareness Park.


7.  Not all deserts are an occasional cactus and sage brush, the Sonoran Desert has trees, bushes, and many varieties of cactus!

8.  Cactuses make forests too just like evergreen trees!

Crocheting Baby blankets & Throws

     I've been crocheting blankets for several years. When I was in 8th grade, a friend taught me how to crochet.  In the beginning I made a lot of lopsided blankets, and my girls ended up using them for doll blankets.  I gave it up for years, and then when my girls were in junior high, I started to teach them how to crochet throws for their beds.    Then when friends and my nieces started having babies, I thought I'd try to crochet a baby blanket again and see if I could get it right. If I don't count the stitches, I end up adding on to the rows, and then I have to rip out half of it and start over again.   Baby blankets are a lot of fun to make, and they make a very special gift.  If you'd like to learn how to crochet, you can check out this video on  Youtube.  I also found a video on Youtube for making a baby blanket.

What is the Difference Between Logos & Rhema?

     I learned when I was in college that there are two Greek words for God's word in the New Testament --one is logos which is the constant word or the black and white text,  and the other is rhema which is the instant word. Matthew 4:4  is a good example of both logos and rhema: "But He answered and said, It is written, 'Man shall not live on bread alone, but on every word that proceeds out through the mouth of God.'"

In the footnote in the Recovery Version of the New Testament, it says word here is rhema.  Then it says:"In this temptation all the words quoted by the Lord from Deuteronomy were logos, the constant word in the Scriptures.  But when He quoted them, they became rhema, the instant word applied to His situation.  

   I was listening to a message on Living Stream's website this week, and one part was on Ephesians 5:26--"That He might sanctify her [the church], cleansing her by the washing of the water in the word,"  I didn't realize it until he said it, but the Greek word here is also rhema.  This part of the message really spoke to me:    
"But this water is in the word, it's the laver of the water of the flowing of God in the word, but the Greek word for word there is rhema, the present word, the word spoken to us personally and intimately; it's God word with our name on it.  We need to say, 'Speak to me, Lord.'  Speak to us, Lord so that He has a way to sanctify us and prepare us to be His bride."
 Many times during the rest of last week, this pray rose up within me, Speak to me, Lord.  I need a word with my name on it!  But the base for the Lord's personal speaking to us is so obvious--we have got to spend time reading the Bible.  Doesn't it seem like it always comes back to that?  Every day I want to have this aspiration that I want to hear the Lord's speaking.

From the Life-Study of Luke - Not Reading the Bible Superficially

     The dictionary defines superficial as being concerned with comprehending only what is on the surface.  Yesterday I was reading  Chapter 77 in the Life-Study of Luke, and Witness Lee was sharing about not reading the Bible superficially.  His speaking on page 649 spoke me:
 "Recently, while I was having a time with the Lord, I realized that we all need the Lord's mercy.  We may have never seen into the depths of the truths that are revealed in the Bible.  Rather, we may often read the Bible in a very superficial way.  We do not go below the surface to see what is in the depths" (Lee, Witness. Life-Study of Luke. Anaheim: Living Stream Ministry, 1984, Print). 
   As I was thinking about reading the Bible superficially, I  remembered something I had read earlier this week on Psalms 119.  There was a reference in The Ministry of the Word magazine to Deuteronomy 17:18-20.  You can see from this verse that superficiality matters to God-- "When he sits on the throne of his kingdom, he shall write out for himself a copy of this law in a book, ... and it shall be with him, and he shall read in it all the days of his life...."  Back then the law was the first five books of the Old Testament.  Take a look at those five books--that's a lot of writing!  Think about how much time it would take to write out all those chapters.

    You can tell by reading through the accounts of the kings that not all of the kings were benefited from doing this.  I think the answer to why is given especially in Psalm 119.  You can really see in the 176 verses of this psalm that the  psalmist loved both God and His  word with his entire heart.  This love caused the psalmist to muse on God's word.  Psalm 119:97 says, Oh, how I love Your law!/ All day long it is my musingIn Hebrew musing means to carefully consider.  This speaking has reminded me of the importance of reflecting on God's word. What touches me from all this is how we come to God's word matters

Make Your Own Gyros With Jer D's Outstanding Chicken Souvlaki

This is an excellent recipe for chicken souvlaki that comes from my Italian son-in-law. 
We served these gyros with herbed rice and Greek Salad.  I put mine in lettuce wraps and it was still delicious!

   I added more balsamic than his recipe calls for.  This souvlaki is so mouth watering and the homemade tzatziki sauce that I picked up from All Recipes is perfect!

Chicken Souvlaki for Gyros - for 8
 
1.  Prepare Souvlaki Marinade -   Mix in a bowl:
(1)    1/2 cup balsamic and 1/2 cup olive oil
(2)    Add  2 cloves of minced garlic and  1/4 t oregano
(3)  Then stir in  1/2 t salt and 1/2 t of black pepper 
 
2.  Prepare chicken: 
(1)  Rinse a 4 lb bag of chicken tenderloin pieces. 
(2)   Put chicken in resealable bag and pour enough marinade over it to adequately coat it and  put in the refrigerator for 6 hours or overnight is best!

3Tzatziki Sauce (cucumber sauce): 
(1)  Toss ½ cup of shredded cucumber with 1 teaspoon salt, and allow to sit at least 5 minutes.
(2)   In a medium bowl, mix 1 cup of yogurt, ¼ cup of sour cream, 1 tablespoon lemon juice, ½ T rice vinegar, and 1 t olive oil. 
(3)  Season with 1 clove of minced garlic,  and 1 T fresh dill. 
(4)  Squeeze the cucumber to remove any excess water; stir into sauce. 
(5)  Season to taste with ½ t salt and ¼ t pepper. 
(6)  Refrigerate in serving bowl until ready to use.

4. Arrange condiment platter: 
(1)  Thinly slice 1 red onion
(2)  Slice or chop 1-2 tomato
(3)  Slice 1/2 cup kalamata olives and 1/2 cup pepperoncini.  
(4)  Rinse romaine lettuce and slice.  Put some larger pieces for gluten free lettuce wraps!!
(5) 1+ cups feta cheese.

5. Grilling the chicken: 
(1)   Preheat an outdoor grill for high heat.  Brush the grill with oil if you want to make sure it doesn't stick.
(2)  Remove chicken from marinade and place on prepared grill. 
(3)  Discard remaining marinade. 
(4) Grill chicken until juices run clear, about 4 minutes on each side.
(5)   Remove chicken from heat, and allow to sit a few minutes before slicing into thin strips.


6.  Optional - Warm up pita shells:  Place pita rounds on the grill, and cook for about 2 minutes or until warm, turning frequently to avoid burning. (We didn't do this, and they were still great!)

7.  Assemble Spread  tzatziki sauce over the pita shell, fill with chicken, condiments, and sprinkle feta cheese over the top.  For gluten free eaters:  Put sauce on lettuce leaves and stuff with chicken, tomatoes, and onions or make a salad out of it.

How is Your Relationship With the Lord?

     Can you talk to the Lord like a best friend?  I'm getting there.  I grew up just following directions at church like stand, kneel, repeat after me, etc., and for years that was my only involvement with God.  So, I didn't have a clue what a personal relationship with God was 
about until I got saved.  But looking back over the years from when I received the Lord in 5th grade to now it has definitely been an ongoing process.  

    Through hearing or reading messages from more advanced believers I learned that God wants to have a personal relationship with man.  To me that's a bit mind boggling.  Have you ever considered that the Creator of the universe wants you to talk to Him and He wants to know you personally?

    Last week I was listening to a message under the Webcast Subscription Service on Living Stream Ministry's website, and the brother brought up this matter of having a relationship with God.  I often type out what touches me when I'm listening to something, so here is an excerpt from my notes:
"...To love the Lord with the first love, to give Him the first place in all things is to have a personal, private, and spiritual relationship with the Lord. We've shared this a lot, but what  I underlined here is--relationship with the Lord.  I like to say again, relationship with the Lord.  How is your relationship with the Lord?  I am so concerned for you….I say this very seriously--How is your relationship with the Lord?  Do you have a relationship with Him like you do with your best friend?"
 Did you count how many times he used the word relationship in this short paragraph?  

    Then he went on to talk about how the seeker in the Song of Songs is a picture of the believers having a loving relationship with the Lord. You can see in her seeking that her relationship was personal, affectionate, and intimate. You can see it's personal because she said,
"Draw me, and we will run after you."

    You can see it was affectionate because she said, "Let him kiss me with the kisses of his mouth." And finally, you can see it was an intimate relationship because she said, "The king has brought me into his chambers."  The brother shared that the chambers are symbolic of our human spirit where the Lord dwells in us. In the same way that the Lord went off in the gospels to pray to the Father, we also need to have some alone time to pray, sing, and just talk to God about what's going on in our life. It's good to be reminded that God doesn't want a routine, He wants a relationship!

Gluten Free Chinese Almond Chicken Stir Fry

   Here's a simple recipe for making a great Chinese classic.  I got this from About Chinese Food, and after making it a few times, I tweaked the stir-fry sauce to get it without using chicken broth.  And I know it came out good because all the students loved that sauce. 

 Just remember to not overcook it so the vegetables are crisp-tender.  Taste the sauce and adjust it for any more salt, pepper,  tamari or chicken bouillon. 









Gluten Free Chinese Almond Chicken Stir Fry - for 8

1.  Prepare the chicken: 
(1)   Rinse 1 pound of chicken breasts and pat dry. 
(2)   Cut the breasts into thin strips (it’s easier if the chicken is partially frozen). 
(3)  Combine the chicken with 2 T gluten free tamari, 1 chopped green onion, and 2 t cornstarch.
(4)  Marinate the chicken for at least 20 minutes.

2.  Prepare the sauce - Whisk together in a bowl the following:
(1)  2 cups of chicken broth (Or what I like to do because I don't always have chicken broth on hand is  make my own with 2 cups water and 5 t of Better than Chicken Bouillon--the extra bouillon really gives the sauce a great taste!)
(2)  2 T rice wine or dry sherry and 5 T gluten free tamari
(3)  2 t sugar, 1/2 T salt,  1½ t pepper, and 3-4 T cornstarch.   Set aside.

3.  Prepare vegetables:  
(1)  Rinse a can of water chestnuts under warm water, drain, and chop up.
(2)  Dice up ½” of ginger root. 
(3)  Put 1 ½ c of frozen pea pods in a bowl or use 1 cup of frozen peas. 
(4)  Dice up 1 ½ cups of celery or cut on the diagonal.
(5)  Dice up ½ cup of onion
(6) Chop up  ½ cup of green bell pepper  and 1/2 of a red bell pepper.

4.  Stir fry the chicken:  Heat a large wok/skillet over medium-high heat, then add 2 T oil.  Add the chicken and stir-fry until the chicken turns white.  Remove from wok/skillet and  put in a bowl and cover.

5. Stir fry the veggies:  
(1)  Heat 2 T more of oil in the wok/skillet. 
(2)  Add the ginger slices and stir-fry until fragrant (about 15 seconds). 
(3) Add  the onion, celery, and green peppers; stir-fry 2-3 minutes. 
(4) Then add the water chestnuts and peas.

6.  Add the sauce in the middle of the wok/skillet:  
(1)  Stir into the sauce 3-4 T of cornstarch mixed with a bit of water.  Heat to bubbling and add the chicken back into the wok/skillet and stir to combine.
(2)  Turn down the heat to medium-low and allow the sauce to thicken.  Sprinkle with ½ -1 cup of slivered almonds before serving.  

 Serve over rice.
