Judi's Yummy Gluten Free Dutch Babies

  Sometimes you need a quick but delicious breakfast.  A few weeks ago when my son's family was visiting, I whipped up my friend Judi's recipe for a Dutch pancake--these are commonly called Dutch babies.  Anyway along with that I made some rice pudding, scrambled eggs with bacon, and a fruit salad. No one was complaining--they love it when Mom goes all out!!  Two of my other kids showed up to eat it all up!    


When I ate this pancake at Judi's house, I noticed how hers held its shape, and she told this was her secret!  As you can see in the recipe below, she says she uses 1+ cup of flour.  I think I put in 1 1/4 cups, and it still needs a bit more, so next time I will try 1 1/2 cups.  

These were delicious with a blackberry sauce and yogurt. 



Judi's Dutch Pancake


1.  Separate 5 eggs - Put 5 yolks into a blender and the whites into a  medium-sized bowl.

2.  Into the blender add the following:
(1)  1+ cup of gluten free flour
(2)  1 cup of milk
(3)  1/8 t of salt

3.  Put 1/4 cup of butter into a 9 x 13 pan or into a 9" cast iron skillet and let it melt.

4.  Fold the whites into the blended ingredients.

5.  Pour over the butter and bake at 425 for 20 minutes.

Why Did God Create Man in Genesis 1:26?

   God created man.  Not everyone believes that, but that's what the Bible says. That poster that hangs in a lot of science rooms of man's evolution from apes just never seemed right to me. It discounts the brilliance of the Almighty--like God couldn't do it right the first time. Why can't people just believe Genesis 1:26?  Man is unique in the universe because man was made in the image of God:  

And God said, Let Us make man in Our image,  according to Our likeness; and let them have dominion over the fish of the sea and over the birds of heaven and over the cattle and over all the earth and over every creeping thing that creeps upon the earth.

   For years I thought dominion was just a matter of man being like a caregiver over all the creatures on the earth.  I really didn't get what dominion was really all about until I read this study on Genesis.

     In chapter 6 I learned that God created man for 2 purposes, and they're seen in  the words image and dominion. In chapter 6 Witness Lee shares how man's being created in the image of God is just like a glove is made in the image of a hand.  When we opened our hearts to the Lord, He came into us. Finally "the hand" came into "the glove." This was God's original intention even before man fell in Genesis 3!   

    Secondly, man was created so that he would exercise dominion over God's enemy Satan, implied in the words "every creeping thing."  I learned in my reading that it would have been easy for God to demolish Satan, but He wants man to deal with His enemy.  I read chapter 7 of the Life-Study of Genesis with a new believer, and we were both amazed at what we read on page 81:
God wants to regain the earth.  The earth has become a crucial place, a place that Satan wants to hold and a place that God wants to regain. The battle is over the earth.  Whoever gains the earth is the winner. If Satan can keep the earth under his hand, he has the victory. If God can regain the earth, He will have the victory….The church must fight the battle to regain the earth, if not the whole earth, at least some stepping stones, some outposts for the Lord Jesus to put His feet upon. He goes on to say that God's kingdom has no problem in heaven and for sure His will and His glory are fully manifested there with all the angels.  But God needs to see all these threethe responsibility of the church.  This is what God created us for--we are the means for God to regain the earth.

My New Zealand Neighbor's Recipe for Triple Berry Pavlova

Many years ago our neighbor from New Zealand came over to bring us one of their famous desserts.  We were all oohing and ahhing over how beautiful it was, and when we bit into it, it was absolutely yummy.  


 I haven't made one in awhile, but with the all the berries we've been picking, I decided to make one for our guests from Taiwan.  She helped me whip up the egg whites and decorate it when it was done.  

Instead of using whipping cream, I used whipped coconut cream.  You can use a lot of combinations of seasonal fruit, but strawberries and kiwis are a must!   The pavlova here is decorated with kiwis,  strawberries, blueberries and blackberries.  And yes, everyone oohed and ahhed!





Triple Berry Pavlova

1. Preparing the egg whites for pavlova: 
(1)  Whip up 4 egg whites  with 1/8 t of salt until stiff but not dry, about 1 minute.  
(2)  Beat in 4 T of water
(3)  Slowly add 1 cup of sugar (I used 3/4 cup) slowly beating approximately 2 minutes.
(4)  Add 3 T of tapioca starch, 1 t white vinegar, and 1/2 t of vanilla and beat 30 seconds to a minute.

2.  Preparing the pavlova for baking:
(1)  Put a piece of parchment paper onto a cookie sheet.  
(2) Then turn out the pavlova and using a spatula make a 10-12" circle.  Pile up the edges like you see here.  
(3)  Bake at 275 for 1 1/2 hours. Check it at an hour if your oven runs hot.  Mine was lightly browned in that hour.  

3.  Meanwhile prepare berries and whip up the cream:
(1)  Rinse and slice strawberries.  
(2)  Rinse blueberries, raspberries, or blackberries.
(3)  Slice 2 kiwis
(4)  Whip up 1 cup of cream or coconut cream (without any liquid) until stiff.  Add 2-3 t of sugar.

4.  Prepare the pavlova:
(1)  Put the pavlova on a serving platter.
(2)  On the  cooled pavlova spread the whipped cream.
(3  Make a beautiful pattern with your berries and kiwis.

What Happened Between Genesis 1:1 and 1:2?

   What happened between Genesis 1:1 and 1:2?  It never made sense to me that God would make the earth a ruin, and I never heard any explanation that put it together for me.   Actually something cataclysmic happened.  And without reading chapter 2 in the Life-Study of Genesis I wouldn't get it at all.  In this chapter all the pieces are brought together to prove that the earth God created in Genesis 1:1 was beautiful and ready to be inhabited.   I found out that the verses that show this are found in Job and Isaiah:

Where were you when I laid the foundation of the earth?  Tell me if you have understanding….When the morning stars sang together and all the sons of God [angels] shouted for joy.  Job 38:4, 7

For thus says Jehovah who created the heavens--He is the God who formed the earth and made it.  He established it. He did not create it a waste….  Isaiah 45:18

    So what happened then? Before I go into that I want to underscore here that Witness Lee  said many times that when he was  speaking, he was always standing on the shoulders so to speak of the men and women of God who had gone before him.  In this chapter he relies many times on the light that he received from reading a book by G. H. Pember on this subject.  I found this excerpt from page 19 really helpful in understanding what happened between these two verses:
  In his famous book, Earth's Earliest Ages, G. H. Pember, has made a scholarly and thorough study of this matter….Between Genesis 1:1 and 1:2 there was a period of time which he called the interval. No one can say how long this interval was.  At any rate, it must have been a very long period of time.  After studying this matter thoroughly, Pember Inferred that at a certain time after the original creation, Satan and his angels rebelled (Lee, Witness.  Life-Study of Genesis. Anaheim: California, 1974, Print).
    In his book Pember points out that this rebellion is recorded in Isaiah 14:12-15:  "How you have fallen from heaven, O Daystar, [the Latin Vulgate translates this name Lucifer] son of the dawn! …But you, you said in your heart: I will ascend to heaven; above the stars of God I will exalt my throne, and I will sit upon the mount of assembly in the uttermost parts of the north. I will ascend above the heights of the clouds; I will make myself like the Most High. But you will be brought down to Sheol, to the uttermost parts of the pit.   

     In this chapter I learned that Lucifer was the archangel,  like all God's angels he had a free will, and   he actually wanted to be higher than God. You can see this in all the five I wills in the above verses.  Pember linked these verses in Isaiah with Ezekiel 28:14-17A.  In this passage it's evident that Lucifer had a very high position in heaven before he rebelled:  You were the anointed cherub who covered the Ark; indeed I set you, so that you were upon the holy mountain of God; you walked up and down in the midst of the stones of fire. You were perfect in your ways from the day that you were created, until unrighteousness was found in you…. So I cast you out as profane from the mountain of God, and I destroyed you, O covering cherub, from the midst of the stones of fire.  Your heart was lifted up because of your beauty; you corrupted your wisdom by reason of your brightness. I cast you to the ground;…

    After his rebellion, God called him Satan which means enemy.  And  because of his rebellion God judged the heavens and the earth.  This Life-Study mentioned  that the verses in Job 9:5-7 show glimpses of this judgment where we are told that God stopped the stars and sun from shining. From my reading I learned that's why Genesis 1:2 says the earth became waste and emptiness--it wasn't created that way. Satan's rebellion with a third of the angels (Revelation 12:4) put the entire universe into chaos.

     Don't you find this incredible and eye-opening?  I sure did.  It put a lot of things in the Bible together for me. Probably what touched me the most is God's creation of man with both His image and dominion was so that God could have a way to both deal with this rebellion and fulfill His eternal purpose.  More on that later!
