A month ago my daughter and I made a batch of pulled pork for a family celebration. I made some major modifications to the recipe she gave me, and actually I liked this batch better! I'm not being partial either, I used less balsamic, more ketchup, and less sweetners.
The sliders were served with cole slaw, pasta salad, vegetable platter, and chips. Franz makes some amazing rolls that were perfect for the three other people who were gluten free. This recipe serves about 20.
BBQ Pulled Pork Sliders
1. Rinse 2 pounds of pork loin and put it into a large crock pot.
2. Chop 1 yellow onion and 1 green bell pepper
3. Put the onion and green pepper on top of the pork loin. Turn it on low and cook it for 4 to 5 hours.
4. Simmer the BBQ sauce in a medium sized pan for 15-20 minutes:
(1) 1 1/2 cup of ketchup
(2) 1/2 cup of balsamic vinegar
(3) 1/4 cup of agave nectar
(4) 1/3 cup of brown sugar
(5) 1 T Worcestershire sauce
(6) 1 T Dijon mustard
(7) 1 clove of minced garlic
(8) 1 teaspoon salt and 1/2 teaspoon black pepper.
5. Drain off any excess liquid off the pork. You can add back some of it after you add the sauce to get the sauce the consistency you want. Then using a fork shred the pork into strips.
6. Then add the sauce to the shredded pork and let it cook on high for another hour. Check it and taste. Make any adjustments in seasonings.
7. Put on warm until ready to serve.
