I have to say that the Vietnamese dad and son liked this dish! And Tien said that it did taste like what he had back home. I don't think they were just being polite, because when I took a bite, I was like wow, I love the way the green beans make this taste!
Authentic Vietnamese Chicken & Green Bean Stir Fry (Easy to Make Gluten Free!)
1. Prepare vegetables:
(1) Thinly slice 1 onion.
(2) Mince 4 cloves of garlic.
(3) Wash and prepare 2 lb of french cut green beans. Or 4 cups of frozen french green beans, but the recipe says if you use frozen the texture of the bean won't be as crisp.
2. Prepare meat: Thinly slice 1/2 of a pound of chicken into bite-sized pieces.
3. Prepare stir-fry sauce - In a small bowl put:
(1) 1 cup of water or soup stock
(2) 1 t of salt, and 1/2 t of black pepper (I added) (And Next time I will add 1 t black pepper)
(3) 2 T gluten free tamari (Next time I will make this 4 T)
(4) 1T of tapioca starch
4. Stir-frying:
(1) Pu 2-3 T of coconut oil into a large skillet or wok. (I often just use my electric skillet that has high sides for curries and stir-fries_
(2) Stir-fry the chicken and onions over medium-high heat until the chicken becomes tender. Towards the end add the garlic and let it cook about 30 seconds or so.
(3) remove and put in a covered bowl.
(4) Add 1 T more oil and then add the green beans and stir-fry until they turn bright green.
(5) Add the stir-fry sauce and cook and stir to combine.
(6) Put the lid on and let the beans cook until crisp-tender, try 2 or 3 minutes and check.
(7) Add the chicken and onion mixture and stir well.
