Great Cajun Cooking - Gluten Free Shrimp & Sausage Jambalaya

Tried any new recipes lately?  This last weekend my daughter and I made jambalaya for the very first time!  We've heard of this southern recipe, but never had it before.  It's a lot of fun trying out a new recipe with someone who likes to cook!!   
We adapted this recipe from Real Simple.

We were just astounded at how good this dish was!  I think the Cajun sausage made everything else taste fantastic!

Shrimp & Sausage Jambalaya - for 4

1.  Prepare the meat:
(1)  Rinse 1/2 pound of medium shrimp 
(2)  Chop up 1/2 - 1 pound of Cajun sausage (We bought the kind that was precooked, so we didn't have to cook it too long.)

2.  Prepare vegetables:
(1)  Dice 1 large onion
(2)  Dice 1 red pepper and 1 orange pepper (My daughter wanted to use these instead of the green pepper--your preference!)
(3)  Dice 2 stalks of celery
(4)  Mince 4 cloves of garlic
(5)  Chop 1/2 cup of parsley

3.  Prepare jambalaya:
(1) Put 2 T of coconut oil into a Dutch oven and heat it up on high, then add the shrimp and cook for 2-3 minutes.
(2)  Remove shrimp and put in a covered bowl.
(3)  Then add the sausage and cook for 3-5 minutes.
(4)  Now reduce the heat to medium and add garlic, celery, bell peppers, and onion  Cook until tender about 5 more minutes. 

(5)  Then stir in 1  cup of long-grain rice, 1 14.5 oz diced tomatoes (some people omit this), 2 cups of chicken broth, 1 t salt, 1/4 t cayenne pepper, 1 bay leaf, and half of the parsley.  
(6)  Reduce the heat to low, covered and simmer for 20 minutes until liquid is almost absorbed. Note: We liked having a little bit of liquid left in our bowls.
(7)  Stir in the shrimp and  the remainder of the parsley.
(8)  Cover it again, and cook about 3-5 minutes more.
