Tasty Gluten Free Sweet & Sour Fish



  I love the tang of a sweet and sour dish.  This fall I came across a sweet and sour recipe in my daughter-in-law's family cookbook and decided to try it out with a recipe in my Heritage School Cookbook for Sweet and Sour Fish.. 

   I don't know about you, but I pretty much go by the book when I cook; I'm not that adventurous.  Every now and then though  I surprise myself--I add a pinch more of this and that, and it comes out just right.  And that's what happened with this sauce.  










Gluten Free Sweet & Sour Fish - for 6 to 8

1.  Prepare fish:  Rinse and then cut 1 pound of cod into 1" chunks.

2.  Prepare vegetables & pineapple:

(1)  Cut 2-3 carrots on the diagonal and steam lightly for about 10 minutes.  Drain and put aside for later or cut smaller (a student's mother showed meow to do this by slicing the carrot in about 5 pieces, then stand each piece up and slice it in about 4-5 pieces, and stir-fry with other veggies.
(2)  Slice 1 green pepper.
(3)  Thinly slice 1 small onion
(4)  Mince 3 cloves of garlic
(5)  Drain 1/2 cup of canned pineapple (You can reserve pineapple juice for some of the sauce if you like)

3.  Prepare sweet & sour sauce - Put in a bowl and stir:
(1)  2/3 cup of water + 1 t of Chicken Better Than Bouillon
(2)  1/2 cup of white vinegar
(3)  3 T  ketchup and 7 T gluten-free tamari (The original recipe calls for 1 T of ketchup and 1 T of soy sauce.)
(4)  3/4 cup brown sugar (The original recipe calls for 1 1/2 cups of brown sugar--I'm always cutting it down)  and 3 T tapioca starch.

4.  Make the sweet & Sour fish - Use a large stainless skillet:
(1) Put 2 T of coconut oil into a large skillet and stir-fry the onion and green peppers for 2-3 minutes.  Add the garlic and stir-fry for 30 seconds.
(2) Then add the sauce and the fish pieces and simmer for 3-4 minutes.  
(3)  Then add  1/2  to 3/4 of a can of pineapple chunks cut in half, and stir in the steamed carrots and let simmer 2 minutes or so more.
(4)  Whisk together 2 T of cornstarch mixed with 1/4 cup of cold water. Stir into the sauce and stir until it's thickened.  
(5)  When it begins to bubble, turn it down and simmer for 1-2 minutes, Check fish to make sure it is done.
6)  Adjust seasonings.  Not sweet enough? Add more sugar.  Not sour enough?  Add a bit more vinegar.  You can add a few drops of Sriracha to give it a bit of zip.
