Don't like broccoli? Sticking it into stir fries is one way to get more of this amazing cancer fighting vegetable into your diet! I've only made this recipe a few times, but this past weekend I made it again and adjusted the seasoning in the sauce to give it a little bit more zip. The Asian students and my husband all said it was a keeper. The original recipe doesn't call for carrots and celery, but I wanted to add more color and vegetables to this delicious stir fry.
Gluten Free Chicken Broccoli Stir Fry
2. Prepare veggies:
(1) Cut 2 cups of broccoli florets
(2) Slice 1 red/yellow/green bell pepper cut into strips
(3) Cut 1 small onion into thin slices,
(4) Slice 2 carrots and 2 celery on the diagonal.
(5) Mince 2 cloves of garlic and put in a separate pinch bowl, and chop up 1 T of fresh ginger and put that in another pinch bowl.
3. Prepare the stir-fry sauce: Whisk 2 cups of chicken stock or 2 cups of water with 4 t of chicken bouillon, with 8 T tamari, 2 T rice mirin or cooking sherry, 3-4 T cornstarch, 2 t salt, 1 t black pepper, and 1 t red pepper flakes in a bowl.
4. Stir-fry chicken: Heat 2 T of coconut oil in a wok or large skillet and let warm up, add the garlic and ginger and stir fry until fragrant about 30 seconds.
Then add the chicken and stir-fry for about 2 minutes until white.
5. Stir-fry veggies: Add the vegetables and stir fry until crisp-tender about 3-4 minutes. Then add the stir-fry sauce and stir about 2 minutes until the sauce thickens.

I am a Chinese student, and I've had this a few times at Jackie's. This colorful dish gives me a great appetite, and the tender chicken with the combination of vegetables makes a delicious dish.
