Gluten Free Chinese - Authentic Chinese BBQ Chicken

      This Chinese BBQ is fantastic! It comes from a Taiwanese friend who used to bring this to potluck dinners we had with college students.  It was so good I asked her to write it down for me.  One thing I learned quickly when I was diagnosed with celiac disease was I had to make up most of my own sauces and dressings.

I have enjoyed the challenge of researching recipes and tweaking them. What's great about this recipe is all you have to do to make it gluten free is use gluten free tamari instead of soy sauce.  I know you’ll like this recipe!


ROSE'S CHINESE BBQ RECIPE

Note:    Use as much of this marinade as you need because this recipe makes enough for about 20 legs/thighs. 

1.  In a bowl combine:  1/2 cup ketchup, 1/2 cup tamari, 1/4 cup honey or agave (I’ve used both), 2-3 T sesame oil, 2 tsp. ginger minced,  and 2 tsp. (about 2 cloves) fresh minced garlic.  I like to hold a little bit of the marinade to brush on the chicken when I turn it when I do it under the broiler. 


2. Marinade chicken: Put chicken in fridge at least 1 hour and then grill.
Or you can bake it for 50-60 minutes at 350 on a broiler pan, turn the chicken after 25 minutes.  When I cook the chicken like this, it's almost like doing it on the grill!
