Thai Salmon & Butternut Squash in Red Curry


Here is a great curry fish recipe that uses butternut squash (and probably any other kind of squash could work, too).  It's a perfect recipe for fall and winter when squash is in abundance.   


When I put squash in a curry, I like to steam it  separately for a bit and then add it to the curry and let it simmer for 5-8 minutes. This curry is a great combination of flavors.  


Thai Salmon & Butternut Squash in Red Curry  
For 6 to 8


1.  Prepare fish:  Rinse 1 1/3 pound of salmon (I have also made this recipe with cod) and cut into 1" pieces.  

2.  Prepare vegetables:  
(1)  Cut and and cube 1 pound of butternut squash.
(2)  Scrub 3 medium potatoes and quarter them and then cut them into wedges.
(3)  Cut 1 onion in half and then slice it thinly.
(4)  Slice 1 green pepper.  I usually cut all the slices in half again.
(5)  Thaw 2 cups of green beans.

3.  Prepare curry:
(1)  Put 2 T of oil into a large skillet and sauté 3-4 T (we usually use 4 T)  of red curry paste until it's fragrant about 30 seconds.
(2)  Add 1/2 can of regular coconut milk (You will use a total of 2 cans).  
(3)  Add the onions and green pepper.
(4)  Stir in 2 T fish sauce, 2 tsp. sugar, and 1 tsp. salt.  Then stir in the rest of the coconut milk.
(5)  Then add the  potatoes, squash, green beans and fish. Then slowly add another whole can of coconut milk.  Let the curry simmer for 2 minutes.
 Note:  Be careful not to let the curry boil or the coconut milk may curdle.
(6)   Let the curry simmer for about 3-4 minutes longer.
(7)  Taste the curry and adjust any seasonings.  It should be fabulous!
