Yummy Vegetarian & Gluten Free Tom Yum Soup

I finally made this recipe last week.   It was on my list of Thai recipes to try out. Actually it was a combination of two Tom Yum recipes.  Our Thai student gave it a thumbs up, and we were all like wow this is good!

     It is a bit spicy, but you can control that by how many pepper pods you put in.  You can always put some Sriracha on the table if someone wants more heat.  To go along with this soup I made some stir fried bean threads and an Asian salad. 

Vegetarian Tom Yum Soup

1.  Prepare veggies:
(1)  Add 1 stalk of lemon grass (the white part) minced.
(2)  Mince 4 cloves of garlic.
(3)  Slice 2 green onions.
(4)  Slice 1 cup of shitake mushrooms (I used button ones).
(5)  Chop 1-2 cups of bok choy.  Chop the white stem.
(6)  Slice 1 cup of cherry tomatoes in half.

2.  Prepare chicken stock:
(1)  Put 1 chicken back/breastbone into a pot with water to cover.  Skim off foam and then drain.
(2)  Add about 8 cups of fresh water, 1 T rice mirin, 1 thumb size piece of ginger minced, 2 green onions sliced in 1" pieces, 2-4 red pepper pods,  and  1 T of salt.
(3)  When it comes to a boil, turn the heat down and let it simmer for 2 hours.

3.  Mix fish sauce & lime juice - In a small bowl mix the following: 

1 T of Sriracha chili paste, 1 T fish sauce, and 2 T freshly squeezed lime juice.

4.  During the last 30 minutes:
(1)  Add the lemon grass and garlic and let cook 5 minutes.
(2)  Then add the mushrooms and cook 5-8 minutes
(3)  Stir in the bok choy and tomatoes and cook for 2 more minutes.  The bok choy should be on the crisp side.
(4)  Reduce the heat and stir in the fish sauce mixture.

8.  Optional:  Add cubed tofu if you like.
