Outstanding Gluten Free Oatmeal Pancakes

  Last Saturday my granddaughter came into our room and asked me if we could make oatmeal pancakes with chocolate chip smiley faces for breakfast.  I thought that was a
yummy idea, and so we started to get everything set up.

  Soon we were joined by her brother, and together we made breakfast before everyone woke up.  What a fun surprise it was for everyone else! 


   This recipe is from my Heritage School cookbook. They were yummy with my homemade apple butter, blackberry, and raspberry jam!   These pancakes are another good way to get more cholesterol fighting oatmeal into your diet.

Gluten Free Oatmeal Pancakes

1.  Soak oatmeal:  Put 2 cups of uncooked oatmeal into a bowl, add 1/2 tsp. of baking soda and 2 3/4 cups of buttermilk. 

2.  Prepare dry ingredients - In a large mixing bowl put:  1/2 cup of rice flour, 1/2 cup of sorghum flour, and 1/2 cup of tapioca flour, 2 tsp. baking powder, 1 tsp.salt.
3.  Prepare liquid ingredients - In a medium sized bowl:
(1)  Beat 2 eggs
(2)  Then add 1/3 cup of oil
(3)  Then stir in 1 T of maple syrup or agave


4.  Combine ingredients:  Gradually add the egg/oil mixture and the oatmeal to the flour mixture and blend until it is smooth.

5.  Frying pancakes:  Lightly grease your frying pan with some oil, and for each pancake pour 1/4 cup of batter.  If you use a stainless skillet like I do, you will need to repeatedly grease it with a napkin dipped in oil.
