Grandma's Perfect Potato Salad

   I can't imagine a BBQ without a potato salad.  This is a delicious potato salad that I believe came from my mother-in-law who is by the way is a tremendous cook.   Her potato salad has a great combination of flavors with just the right amount of crunch. 

   A good friend of mine told me that the secret ingredient in her potato salad was balsamic vinegar--just a tablespoon, and so I have added that here.   Like many salads, there's plenty of room for you to add your own special touches.

Grandma's Perfect Potato Salad


1.  Prepare potatoes: 
(1)  Put 6 medium potatoes into a pot with water to cover and boil until they are tender.  (Sometimes I cube the potatoes ahead of time, but I find cooking them whole and slicing them afterwards is easier and I don't end up with mushy potatoes because I forget to check on them.)
(2)  Let the potatoes cool.
(3)  Slice the potatoes lengthwise and then across to cube them.
(4)  Put potatoes into a salad bowl.

2.  Hard boil 4 eggs.

3.  Prepare veggies:
(1)  Dice 1 onion
(2)  Dice 3 stalks of celery
(3)  Dice 3-4 pickles
(4)  Optional:  Slice 1/2 a can of olives

4.  Make potato salad dressing - In a medium bowl put:
(1)  1 1/2 cups of mayonnaise and 1 T yellow prepared mustard
(2)  Stir in seasonings:  2 1/2 tsp. salt, 1/2 tsp. black pepper, 2 tsp. Costco No-Salt Seasoning or something similar, and 1/2 - 1 T balsamic vinegar
(3)  Add 3 of the hard boiled eggs and use a fork to break them up.
(4)  Then stir in the chopped vegetables and blend until completely mixed together like an egg salad sandwich

5.  Combine ingredients:
(1)   Stir the potato salad dressing into the cubed potatoes. 
(2)  Taste and make any adjustments, usually a little bit more salt, pepper, mustard, or balsamic is what I usually end up doing.
(3)  Slice the last hard boiled egg and arrange it on top of the potato salad.  Sprinkle with paprika.
(4)   Put salad into the refrigerator until ready to serve.
