My Favorite Gluten Free Cranberry Nut Bread

I haven't made cranberry bread for years.  I remember reading Cranberry Thanksgiving to my kids, and I wrote down the recipe in the back of the book but couldn't find it in my recipe binder.  I was hunting for it because I had a few bags of cranberries in the frig from the holidays.  When I checked my daughter's family cookbook, l was glad to find a recipe that looked pretty similar to the recipe from Cranberry Thanksgiving because it had orange juice in it! 

  I cut down on the sugar a bit, and with cream cheese over the top you couldn't even tell!  It's yummy because it's also loaded with cranberries and nuts.    The best compliment was everyone said you couldn't tell it was gluten free!

Gluten Free Cranberry Nut Bread


1.  Prepare dry ingredients - In a large bowl put the following:
(1)  2 cups of gluten free flour--2/3 cup brown rice flour, 2/3 cup sorghum flour, and 2/3 cup tapioca flour (That's the same blend of fours that's in the Namaste Gluten Free Flour Blend.)  Then add 1 cup sugar. 
(2)  Stir in leavening:  1 1/2 tsp. baking powder, 1/2 tsp. baking soda, and 1 tsp. salt.

2.  Prepare liquid ingredients - In a 2 cup measuring cup put:
(1)  3/4 cup of orange juice
(2)  2 T shortening
(3) 1 well beaten egg

3.  Prepare cranberries:   Coarsely chop enough cranberries for 1 1/2 cups and chop 1/2 cup of nuts.

4.  Combine ingredients:  Stir in the orange juice mixture into the flour mixture.  Then stir in the cranberries and nuts.

5.  Baking the bread:  Put in a greased 9 x 5" loaf pan.  Bake at 350 for 50-55 minutes or until a toothpick comes out clean.  Cool on a rack for 15 minutes.
