Gluten Free Rocky Road Brownies


  And you thought rocky road was just a brand of ice cream! One Friday night my friend Judi brought these fantastic rocky road brownies to our dinner and Bible study. To say the least they were a hit with everyone, and one of the students even asked her to make them again for his birthday in December. This brownie brings together the rich flavor of cocoa, crunchy walnuts, and gooey marshmallows in every bite. Enjoy!
Judi's Gluten Free Rocky Road Brownies

1. Cream butter & sugar: In a large bowl cream together 1 cup melted butter  mixed with 1 cup of cocoa and 2 cups sugar.
2. Prepare liquid ingredients:  Whisk 4 eggs and 2 t vanilla  and then add to the butter/sugar mixture and beat until well combined.

3. Prepare dry ingredients: In a medium sized bowl put:

(1) 1/2 cup white rice flour
(2) 1/2  cup sorghum flour
(3) 1/2 cup tapioca flour
(4) Stir in 1 t baking powder and 1/2 t salt

4. Slowly add the dry ingredients to the butter/sugar mixture until combined.  Stir in 1 cup of chopped walnuts.
5.  Baking:  Spread into a greased 12 x 18 x 1 cookie pan or a 9 x 13 pan and bake at 350 for 18-20 minutes.
 
6. As soon as you take the brownies out of the oven, cover the top with mini marshmallows. Put the pan back in the oven for 2 minutes.  Take out and let the brownies cool.
