Sugar cookies are another favorite that you can easily make gluten free! I was glad to find a delicious recipe for sugar cookies. This recipe comes from my Syre School Cookbook. I changed the flours, added peppermint instead of vanilla, and added some applesauce for half of the fat.
Anyway last weekend I was watching two of my grandchildren, and making some sugar cookies was on the list of things she wanted to do. After tying on our aprons, we started mixing up the cookie dough! She was very capable as you can see from the pictures below for being only three years old!

Gluten Free Peppermint Sugar Cookies
1. Mix together the dry ingredients - Mix together in a large bowl:
(1) 2 ½ c of your favorite gluten free flour mixture (I usually use equal amounts of rice flour, sorghum flour, and tapioca flour)
(2) Stir in leavening: 1/2 t baking soda, 1/2 t cream of tartar, and 1/2 t salt.

2. Cream together butter & sugar:
(1) In a mixing bowl cream 1/2 cup of butter for a few minutes and then slowly add 1 cup of white sugar and beat for 3 more minutes. (Or use 1 cup of butter if you don't want to reduce the fat.
(2) Then add 1/2 cup of applesauce (if you want full fat, omit), 1 egg, and 1 t peppermint extract and 1 t vanilla extract.
(3) Beat —the more airy and whipped, the better they will taste.

4. Roll out cookies: Sprinkle rice flour on a cutting board and rolling pin, and roll out the dough to ½” and cut into shapes.
5. Bake cookies: Put sprinkles on and bake for 10 minutes at 350. This recipe makes about 30 cookies. The recipe says it makes6 dozen. And yes, they were still good with half applesauce! You couldn't even tell they were both gluten free and low fat!
