Welcome Fall With Gluten Free Pumpkin Bread!


  Last week I made this pumpkin bread from one of the pumpkins from my daughter Michelle's garden.  I really wanted to make a pumpkin bread completely from scratch. The recipe I used was from one of my good friends.

  It was fun to do this with my 4-year-old granddaughter!  There's nothing like  cooking with your grandkids!



Fall Gluten Free Pumpkin Bread

1. Roasting a small sugar pumpkin: 
(1)  Cut the pumpkin in half and spoon out the seeds. (I roasted the seeds later)
(2)  If the pumpkin is a bit big, you can cut it into several pieces. 
(3)  Cover with foil and bake it at 400 for 30-40 minutes. 
(4)  Scoop out pumpkin and measure 15 oz of pumpkin.  I had to add a bit of water to get it the right consistency.



2.  Cream butter and sugar:  In a large bowl put:

(1)  1 1/2 cups of oil (You can use applesauce for half of the oil) and mix with 2 cups of sugar.  
(2)  Add 4 beaten eggs and mix well.
(3)  Mix well until blended.

3.  Prepare dry ingredients -  In a medium sized bowl put:

(1) 1 cup brown rice flour, 1 cup sorghum flour, and 1 cup tapioca flour.
(2 ) Add the following:   2 t cinnamon, 1 t ginger, and 1/4 t cloves, 2 t baking powder,  1 t baking soda, and 1 t salt. 


4.  Combine ingredients:  Gradually add the flour to the oil/sugar mixture and stir until blended, but be careful not to over mix. 

5.  Stir in 2 cups of canned pumpkin or puree from freshly baked pumpkin
Stir in 1/2 cup of chopped walnuts and 1 t vanilla and mix until combined.

6. Bake bread:  Pour into 3 small baking pans and bake at 350 for about 45 minutes.  Check at 40 minutes by inserting a toothpick into the center and seeing if it comes out clean.
