Toni's Outrageous Gluten Free Corn Muffins

   Trying a new recipe can be risky.  But with the word outrageous in the title of the recipe that was on the bag of Bob's Red Mill cornmeal, I thought I'd like to give them a try and see for myself. 


   I've made the standard cornmeal muffins for years, but the combination of grains,  raisins, diced apple, almond meal, and orange peel sounded too yummy not to attempt. 

    I made a few substitutions, I didn't have soy flour so I used more rice flour, and of course instead of whole wheat flour and wheat germ I used gluten free flours and  ground flaxseed. 

    This morning I made these muffins for the second time with some of my grandkids, and they are definitely not
your traditional corn muffin--they are outrageous!  I took them to a women's brunch and some of the gals asked me how I had made them. And you know that's always a good sign that you found something you'd like to share with others. And now it's your turn to try them!

Toni's Outrageous Muffins

1.  Prepare dry ingredients -  In a large mixing bowl put:
(1)  1/3 cup of Bob's Red Mill Medium Ground Cornmeal
(2)  2/3 cup of rice flour (I used 2/3 cup rice flour instead of having 1/3 cup of soy flour and 1/3 cup white rice flour), 1/3 cup of sorghum flour, 1/3 cup of tapioca flour
(3)  1/4 cup of wheat germ (I used ground flaxseed, of course!)
(4)  1/3 cup of packed brown sugar (the recipe calls for 1/2 but I like to reduce sugar), 1 t of baking soda, 3/4 t of salt,
(5)  1 cup of ground almonds (I used 3/4 cup Trader Joe's Almond Meal), 1/2 cup of raisins,  and 1/2 cup of diced dried apple.  When I don't have dried apple, I grate 1/2 of an apple, and it comes out great!

2.  Prepare liquid ingredients -  In a medium size bowl put:
(1)  2 large eggs - whisk together until well beaten
(2)  Add 1 cup of plain yogurt low fat or whole
(3)  Stir in 1/3 cup of vegetable oil (I used olive oil, and no it doesn't affect the taste at all!)
(4)  Then stir in 1 t vanilla and then zest 1 orange over the bowl and stir it in.  This hint of orange makes a big difference in the taste of these muffins--so try not to omit it!

3.  Combine ingredients:   Stir the  egg/yogurt mixture into the bowl of dry ingredients and stir until just moistened.  The recipe says the batter should be lumpy, so don't  worry if it's thick. 

4.  Bake muffins:
(1)  Oil or spray 12 muffins tins.
(2)  Fill tins about 2/3 full. 
(3)  Bake at 335 - 350 (depending on your oven) for 20-25 minutes.
