Gluten Free Nordy Bars

  These bars have it all!  Butterscotch chips, chocolate chips, marshmallows, and nuts.  A few weeks ago I needed something gluten free to take to my daughter-in-law's baby shower.  I scanned through my cookbooks looking at the bar recipes, and I saw this one in my Syre School Cookbook.

  I'd never made it before, so I was a bit hesitant, but when I looked it over, I thought to myself what wouldn't taste good with a bag of butterscotch chips, 2 cups of chocolate chips  2 cups of marshmallows, and a cup of walnuts?! 

My granddaughter was over to spend the night, and before playing checkers, we made them up. It's so  much fun to cook together! Next time I might try to keep some butterscotch chips to get stirred in at the end with the chocolate chips. 


Gluten Free Nordy Bars


1.  Prepare dry ingredients - In a medium size bowl stir:  1/2 cup of brown rice flour, 1/2 cup of tapioca flour, and 1/2 cup of sorghum flour, 2 tsp. of baking powder, 1/2 tsp. of salt.

2.  Whisk 2 eggs (you will add them later to the saucepan below)

3.  In a medium-sized saucepan put:
(1) 1/2 cup of butter and let it melt.
(2) Add one 12 oz package of butterscotch chips (or a bit less if you like to reduce sugar)
(3) Then stir in 1/2 cup of brown sugar.  Stir until everything is melted.
(4)  Stir in whisked eggs and  flour mixture.
(5)  Mix thoroughly.  Then stir in 2 tsp. of vanilla and cool about 15 minutes.
(6)  After completely cooled, stir in 1 cup of chopped pecans/walnuts, one 12 oz package of chocolate chips, and 2 cups of marshmallows.

4. Bake the nordy bars:
(1) Using a spatula, put the batter into a greased 9 x 13 pan.
(2)  Bake at 350 for 20-25 minutes.
(3)  Cool completely before cutting.  You can refrigerate them a bit before cutting if that helps.
