Simple & Gluten Free Chocolate Cream Pie

This recipe has intrigued me.  I've had my Syre Elementary School Cookbook for about 20 years and I've never made this pie.  It was a black bottom pie that actually looked more like a chocolate cream.  I had an extra pie crust a few weeks ago and decided to make this pie with my  6 year old granddaughter.  We've been cooking together since she was about 2, and it's part of the special bond between us.

I made this pie to celebrate the end of spring quarter for  our international students.   They loved it, but what's not to love about a decadent chocolate cream pie sprinkled with coconut?

Simple & Gluten Free Chocolate Cream Pie

1.  Prepare a gluten free pie shell or buy a gluten free graham cracker crust pie.  I've seen both used for this recipe.

2.  Prepare custard for pie - You will use a double boiler for this:
(1)  Scald 2 cups of milk.
(2)  Bring the water in the bottom of the double boiler to a boil.
(3)  In the top pan stir together 1/3 cup white rice flour,  1/3 cup of Hershey's cocoa, (something extra I saw on Martha Stewart's recipe that I added) 1/3 cup of white sugar, 1/8 t salt.
(4)  Gradually add the scalded milk and stir this mixture constantly while it thickens, about 15
minutes.
(5)  Add 1 bar of German sweet chocolate. (I used two  2 oz. bars of bittersweet Hershey)
(6)  Beat 2 egg yolks slightly in a medium sized bowl, and then pour a bit of the cooked mixture into them slowly stirring constantly.
(7)  Return mixture back to the double boiler and cook about 2 minutes longer stirring constantly.
Note:  The recipe says this mixture will curdle if overcooked.
(8)  Remove from stove and cool.
(9)  Add 1 t of vanilla and cool.

3.  When custard is at room temperature pour it into the prepared pie shell.

4.   Refrigerate pie at least 6 hours before serving.

5.  Whip up 2 cups of cream with 4+ T of sugar and spread over the pie before serving.

Why is There a Rainbow Around God's Throne in Revelation 4:3?

I saw a rainbow last week unlike any I've ever seen before.  I was watching my grandkids last Monday and decided to take them to the park for a picnic on the bay.  While I was sitting on the blanket watching my four-year old grandson play, all of a sudden my granddaughter told me to look at the rainbow.

I was a bit surprised when she said that because it was a hot sunny day with hardly a cloud in the sky.  So I flopped down on the grass next to her and looked up, and there in a half circle around the sun was a rainbow. I grabbed my phone and took a picture hoping it would show the rainbow.  It did.

In about ten minutes the entire sun was almost encircled with this rainbow and I took this picture. I thought about that rainbow a lot that day because it was so unusual. I heard that there's a scientific reason for this to occur, but it still fascinated me. It touched me on Tuesday when I came across a section in  chapter 49 of the  Life-Study of Revelation on the rainbow around God's throne and the one around Christ's head.

And He who was sitting was like a jasper stone and a sardius in appearance, and there was a rainbow around the throne like an emerald in appearance.  Revelation 4:3

And I saw another strong angel coming down out of heaven, clothed with a cloud, and the rainbow was around His head, and His face was like the sun, and His feet like pillars of fire.  Revelation 10:1

It touched me that here in Revelation the mentioning of the rainbow points back to God being faithful to the promise He made concerning mankind  way back in Genesis:
The earthquake at the end of chapter eleven comes from the throne with the rainbow…. Rather, the rainbow encompassing the throne reminds Him of His covenant [Genesis 9:8-17]. This rainbow is Christ.  In 10:1 we are told that another strong Angel, who is Christ will come down out of heaven clothed with a cloud with a rainbow upon His head.  Christ is the universal rainbow.   As God in His righteous fury is carrying out His judgment upon rebellious mankind, Christ in the cloud will be the rainbow to remind God of His covenant with Noah.  It seems that as the rainbow Christ will say, God I agree with Your righteous fury, but I remind You of Your faithfulness.  You cannot forget the covenant You made with Noah.  I am the rainbow in the cloud" (Lee, Witness. Life-Study of Revelation.  Anaheim: Living Stream Ministry, 1976, Print).
Whenever I see a rainbow, I am always reminded that God is faithful to what He says.

Debbie's Less Oil Carrot Cake (Made Gluten Free!!)

I've made this recipe twice this year--once for one of our international student's birthday in May and then just last weekend for a student's college graduation.   I like that it uses a fraction of the oil most carrot cake recipes call for, and yet it still comes out moist.

This recipe comes from my church Come & Dine cookbook.  When I made this recipe I  halved the cream cheese frosting so I could cut down on more sugar.  Believe it or not this frosting is made with 4 oz. of cream cheese and 2 T of butter with just 1 1/2 cup of powdered sugar. I'm always looking for ways to cut down on the sugar, so I didn't mind there wasn't so much

Debbie's Less Oil Gluten Free Carrot Cake

1.  Prepare carrots:  Grate 4 cups of carrots--about 3 large ones.

2.  Prepare dry ingredients - In a medium bowl put:
(1)   2 cups of gluten free flour--I used 2/3 cup white rice flour, 2/3 cup sorghum flour, and 2/3 cup tapioca flour.
(2)  Stir in leavening and spice:  2 tsp. baking soda, 1/2 tsp. baking powder, and 2 tsp. cinnamon.

2.  Prepare liquid ingredients - In a large bowl put:
(1)  2 cups of sugar--1 cup white and 1 cup brown (I usually take off a bit.)
(2)  1/2 cup of extra virgin olive oil and beat for 1 minute
(3)  Add 2 eggs ONE at a time and beat after each one.

3.  Combine ingredients:  Add dry ingredients and blend well for 1 minute.

4.  Bake in a greased 9 x 13 pan at 350 for 30-40 minutes.

From the Life-Study of Revelation - The Connection Between Revelation & Ephesians

Sometimes it's hard for me to wrap my head around some of the things I read.  Since March I've been reading through the Life-Study of Revelation, a whopping 782 pages, and right now I'm on page 563.  Sometimes I have to  read a paragraph twice because it's either amazing or puzzling.  A few weeks ago when I was reading chapter 45, I had a wow moment.    Even the title makes you go wow; I never saw that before--The Correspondence Between the Vision in Revelation 12 and the Book of Ephesians.

Right away on the first page of this chapter Witness Lee shares that the woman in Revelation 12 is the church in the book of Ephesians.  In Revelation 12 we see that within this woman is a man-child.

And a great sign was seen in heaven: a woman clothed with the sun, and the moon underneath her feet, and on her head a crown of twelve stars; and she brought forth a son, a man-child,…   Revelation 12:1, 5A

And then he points out that three times in Ephesians Paul encourages the believers to be strengthened and it is through these verses we can learn the way to become this man-child:

That He would grant you, according to the riches of His glory, to be strengthened with power through His Spirit into the inner man.   Ephesians 3:16

That Christ would make His home in your hearts through faith, that you, being rooted and grounded in love, may be full of strength to apprehend with all the saints what the breadth and length and height and depth are   Ephesians 3:17-18

Finally, be empowered in the Lord and in the might of His strength.  Put on the whole armor of God that you may be able to stand against the stratagems of the devil.  Ephesians 6:10-11

Here's the part on page 520 that brought it all together for me:
Thus, in Ephesians 3:16 and 18 and 6:10 and 11, we see that the way to become the stronger part within the woman is to be strengthened in our inner man, to be empowered to experience the riches of Christ, and to be strong through putting on the all-inclusive Christ as our armor.  Hence, in the book of Ephesians we find the aspects of both the woman and the man-child….Ephesians reveals that a warfare is raging between the stronger part within the woman the enemy and furthermore, that this fighting is carried on by praying.  The way the man-child fights against the enemy is by prayer [Ephesians 6:17-18].  Eventually, the entire book of Ephesians brings us to one climactic point--watching and praying (Lee, Witness.  Life-Study of Revelation.  Anaheim:  Living Stream Ministry, 1976, Print).
Later on in this chapter he shares that when we take like Ephesians 6:17-18 the word of God by prayer, this word does two things within us.  It nourishes us spiritually, but besides that it kills all the negative things in our hearts that frustrates God's growing in us and building us up with other believers.  Another wow moment was seeing that when we allow the word to touch our opinions and other negative things, this helps prepare us to fight the spiritual battle against the enemy.

You can listen to excerpts from the Life-Study of Revelation and some excellent commentary on Life-Study of the Bible with Witness Lee.

Authentic Chinese Chicken & Leek Stir Fry

What do you do with leeks?  I don't know that many recipes for them.   And on top of that my neighbor gave me about six of them. So last week I asked  a Chinese friend's mother who is staying with me for two weeks what she did with leeks.  She smiled and her daughter translated for her that she made a stir-fry with them!  Of course, I asked her if she would show me how to make it.

So on Tuesday I watched and took notes as she deftly sliced up the vegetables and stirred up this marinade. She told me she uses most of the tops of the leeks, but you have to make sure the leeks aren't too old or they'll end up a bit chewy.

 Chicken & Leek Stir-Fry

1.  Prepare chicken breasts:  Rinse and thinly slice on the grain 2 chicken breasts.

2.  Marinade for chicken breasts - In a medium-sized bowl put:
(1)  3 T rice wine, 1 t salt, 1/2 t black pepper,  3 t tapioca starch mixed with 3 T of water, and 1 egg white.
(2)  Add the chicken and mix the chicken well with a wooden spoon.
(3)  Let it marinade for 30 minutes in the fridge.

3.  Prepare vegetables - After rinsing the vegetables:
(1)  Slice 4 carrots in 1" circles, then slice the carrot rings into thin squares.
(2)  Slice 1 red pepper into small pieces.
(3)  Cut 4 leeks down the middle.  Line them up  (like you see her doing in this picture) and then slice them into 1 1/2" slices.  Jessica's mom also slices up the tender tops of the leeks, too.

4.  Stir-frying:
(1)  Put 2 T of coconut oil into a wok or large skillet and warm it up.
(2)  Add the chicken and stir-fry until done.
(3)  Put on a plate and cover while doing the vegetables.
(4)  Add 1 T of  coconut oil and add the carrots and stir-fry a minute or so.
(5)  Then add the leeks and red peppers and stir-fry for 2 minutes.
(6)  Mix 1/2 t of sugar in 1/2 cup gluten free tamari and 1/4 cup of water and add to the pan, put the lid on and cook for 2 minutes.

Serve over rice.
