A New Way to Eat Your Oatmeal! Gluten Free Baked Oatmeal

   I love oatmeal.  I never get tired of it.  A few years ago I had baked oatmeal for the first time at my daughter-in-law's home in Winnipeg.  I had two pieces because it was so good!  I have made it with blueberries, blackberries, and apples and raisins. 

 Our daughter-in-law told us there's two ways you can eat this stuff: Her family likes this best with milk poured over it, but we like to also eat it like a coffee cake. 

Gluten Free Baked Oatmeal

1.  Prepare oats:  Mix 3 cups of gluten free quick oatmeal (I've also used old fashioned oats) and let it sit for 5 minutes.

2.  In a large bowl mix together:
(1)  1/3 cup of melted butter (I've used oil)
(2)  1 cup of brown sugar
(3)  Whisk in 2 beaten eggs
(4)  Add leavening & spices:  2 tsp. baking powder, 1 tsp. salt, and 1 tsp. cinnamon.

3.  Add fruit - Stir in 1 cup of a fruit of your choice:
(1)  blueberries
(2)  1 diced apple and 1/2 raisins
(3)  blackberries

4.  Grease a 9 x 13 pan and bake at 350 for 25-30 minutes.

Do You Know What is God's Building in 1 Corinthians 3:9?

    What is God building in this universe?  The Lord Himself told His disciples in Matthew 16:18 "...and upon this rock I will build My church..."  This building is brought up again in 1 Cor 3:9  "...you are God's cultivated land [or farm], God's building."  

   Following this verse Paul gives us some warnings starting with not laying any other foundation except Christ who is the unique foundation of God's building.  In chapter 28 of the  Life-Study of 1 Corinthians on page 251 Witness Lee shares more on what this building is all about: 

 "Based upon the revelation given in chapters one and two, Paul in chapter 3 points out to the Corinthians that God's goal is to have a building, the temple, for His habituation.  It is not God's intention to have a group of wise men or philosophers.  God's goal is to have the church...In order to reach this goal, God must have the church first as a farm to grow the materials for the building" (Lee, Witness. Life-Study of 1 Corinthians. Anaheim: Living Stream Ministry, 1981, Print).

When I read the Life-Studies of John, I learned that in his opening word John reveals reveals that the Lord's life is for producing God's building. This is in the post What's the Focus of the Gospel of John? Witness Lee has shared many times that you can see the thread of life and building throughout the entire Bible.

Delicious Gluten Free Zucchini Bread

   Zucchini and pumpkin breads are great ways to eat more vegetables!  I made this recipe this fall when my daughter gave me some zucchini from her garden. 


This recipe makes two loaves--so you can eat one and freeze one.  This recipe comes from The Heritage School Cookbook, which is a great collection of recipes from the school where I used to work.


Delicious Gluten Free Zucchini Bread




1.  Prepare dry ingredients - In a medium sized bowl put:
(1)  1 cup white rice flour, 1 cup sorghum flour, and 1 cup tapioca flour
(2)  Leavening &  spice: 1 tsp. baking soda, ¼ tsp. baking powder, 1 tsp. salt, and 2 tsp. cinnamon (The recipe calls for 3 teaspoons.)

2.  Prepare liquid ingredients – In a large mixing bowl :
(1)  Whisk 3 eggs.
(2)  Add 1 cup oil or you can substitute ½ cup applesauce for half of the oil. I do that a lot and it comes out great!
(3)  Then add 2 cups of brown sugar.
(4)  Stir in 3 tsp. vanilla.
(5)  Mix 2 cups of grated zucchini  and 1 cup of chopped walnuts until combined.  




3.  Combine ingredients:  Slowly mix the dry ingredients into the egg/sugar mixture.

4.  Bake breads:  Lightly grease  and flour two 9 x 5 x 2 loaf pans.  Bake at 350 for 35-45 minutes or until a knife inserted in the center comes out clean.

What is God's Farm in 1 Corinthians 3:9?


    Have you ever considered that the believers are like a farm?  Well that is exactly what 1 Corinthians 3:9 says:  You are God’s farm, God’s building.   My father grew up on a farm, and I spent a lot of time there, and through that I learned a lot about farm life.  The main thing I saw is everything revolves around the crops! 

    Because of that I especially enjoyed how in chapter 22 of the Life-Study of 1 Corinthians  Witness Lee gives a connection between farms and God’s people.  First he points out that the church presented in 1 Corinthians is not one of organization, but obviously one of life, and is just like a farm full of growing things. Here’s an excerpt that I liked on page 197 that explained that:
We become members of the church not by the way of joining a social organization, but by being planted….It is a very significant matter to be a plant on God’s farm.  There is no need on the farm for a teacher to instruct the plants.  A plant does not need anyone to tell it what to do or how to grow (Lee, Witness. Life-Study of 1 Corinthians. Anaheim: Living Stream Ministry, 1981, Print).
 Water is definitely a major concern on a farm.  And one of the important points in this message is how as fellow believers on God's farm, we are not only growing, but also helping to water our fellow brothers and sisters so that they also can grow.  As Paul makes clear in this chapter, eventually what we grow on this farm is what we build God's house with. The Best Gluten Free Recipe for Snickerdoodles

   I was thinking about snickerdoodles this winter.  I haven't had any for years, and this one comes from my Heritage School Cookbook.    My granddaughter and I had fun making this batch.  I realized while posting this that I forgot to take some pictures of the cookies.  But you know they were good!!






THE BEST GLUTEN FREE  RECIPE FOR
 SNICKERDOODLES

1.  Prepare dry ingredients -  In a  large mixing bowl put: 
(1)  The recipe calls for 2 3/4 cups of your favorite gluten free flour mix.   When I made these, I used 2/3 cup + 1/4  cup of white rice flour, 2/3 cup + 1/4 cup of sorghum flour,  2/3 cup of tapioca flour, and 1/4 cup brown rice flour. 
(2)  Stir in 1/2 tsp. salt, 1 1/2 tsp. cinnamon, 1 tsp. baking soda, 2 tsp. cream of tartar.

2.  Cream butter and sugar:
(1)   In a mixing bowl cream together 1 cup of softened butter with 1 /2 cups of sugar.  Beat until light and fluffy.
(2)  Beat in the 2 eggs ONE at a time until it is completely blended, and then add 2 tsp. vanilla extract (a website suggested this).


3.  Make batter:  Slowly add the dry ingredients and continue beating until the batter becomes thick and elastic.   Divide into two parts and cover each in plastic wrap and then refrigerate at least 1 hour. This can also be left overnight and finished up the next day.

4.  Make balls of dough:  Each piece of dough should make about 21 balls.  All of this will depend on how big you want your snickerdoodles to be.


5.  Roll the balls in a mixture of 1 /2 T of cinnamon and 3 T of sugar. 

6.  Put the coated balls in the freezer for 10 minutes to firm them up.  Then roll each ball one more time in the cinnamon/sugar mixture.

7.  Bake cookies:  Bake in a 375 oven for 8 to 10 minutes on a parchment lined pan.  You can play with the time to determine how you like your snicker doodles to come out.  Let them cool on the sheet for about 10 minutes and then put them on a wire rack.
