Authentic Chicken Enchiladas Verdes

  I love authentic recipes!  This one comes from a friend's hispanic mother-in-law.  Originally this recipe is for flour tortillas, and it's made by rolling the tortillas with the chicken mixture and pouring the salsa verde over it, and  putting cheese on top.  

   So, of course, now that I'm gluten intolerant I had to figure out a way to still enjoy this yummy authentic recipe. The sauce is yummy, and I'm sure you're aware that the sauce makes the enchilada!

 I served this earlier this fall with some Belizean chicken, black beans, and Belizean cole slaw. It was an incredible feast. Those recipes are in the list below.

Authentic Chicken Enchiladas Verdes

1.  Prepare onions & olives:   Dice up 1 yellow onion and chop up 1 can of black olives.

2.  Prepare chicken:
(1)  Poach 2 chicken breasts in water enough to cover and cook until done.
(2)  Put in a bowl and when cool enough shred with 2 forks.
(3)  Squeeze 1 medium lemon over  the chicken and mix together.
(4)  Stir in onions and olives.
(5)  In a small pinch bowl mix the following spices: 2 T Mexican seasoning, 1 T chili powder, 1 t cumin, 1/2 t oregano, 1/2 t basil, 1 t salt, and 1/2 t black pepper.
(6)  Warm up the contents of 2 12-oz jars of salsa verde.  
(7)  Stir in 1 cup of sour cream.

3.  Assemble enchiladas:  You can either layer this enchilada or roll them and pour all the salsa verde over the top. 
(1)  Pour a thin layer of the salsa verde sauce on the bottom of a 9 x 13 pan or 2 8 x 8s.
(2)   Cut enough corn tortillas into strips to fill the pan(s).
(3)  Spoon a layer of the chicken mixture on top.
(4)  Pour a thin layer of salsa verde over the chicken mixture.
(5)  Grate cheddar cheese or colby-jack cheese over the top of this layer.  
(6)  Repeat the layers.  Top with cheese.

4.  Bake at 350 for 30-40 minutes.

Seeing the Church as the Warrior in Ephesians 6


    Paul’s description of the helmet of salvation, the girdle of truth, and shoes of peace are not poetic symbols.  Through years of experience and a few battles of our own, we’ve come to see these are real items we experience in spiritual warfare. Probably what touches me the most through reading these messages on the armor and my own experience is that all of this portrays the church as the warrior.  God has an enemy, and one of the purposes of the church is to defeat Satan.  Here’s a real enlightening part of chapter 63 of the Life- Study, Page 527-528: 


If we would know how the church can be God’s warrior to engage in spiritual warfare, we must know these three wills, these three intentions.  God’s will, being self-existing, is eternal, uncreated.  As created beings, the angels also have a will.  One of these angels, an archangel, was appointed by God to rule the universe that existed before the creation of Adam.  Because of his high position and his beauty, this archangel became proud.  This pride gave rise to an evil intention, which became the satanic will…The controversy in the universe began with the rebellion of the archangel against God…We simply know that at a particular time, God created man and endowed him with a human will that was free …In Genesis 2 we see that man was free to exercise his will to eat either of the tree of life or of the tree of the knowledge of good and evil.  These two trees represent the divine will and the satanic will, respectively…Although there were three wills, the controversy involved just two parties—God and Satan.  The crucial issue was whether man would choose the divine will or the satanic will… As we all know, the human will took sides with the satanic will…However, through repentance man can turn from the satanic will to the divine will, from Satan’s side to God’s side. (Lee, Witness, Life-Study of Ephesians, Anaheim: Living Stream  Ministry, 1978, Print).

     Every time I hear this I'm amazed because it helps me understand that in many situations God's enemy is working behind people and events to frustrate God's will on this earth.  That's why verse 12 is so striking: For our wrestling is not against blood and flesh but against the rulers, against the authorities, against the world-rulers of this darkness, against the spiritual forces of evil in the heavenlies.   The Life-Study says that these rulers, authorities, and world-rulers refer to the evil angels who rebelled with Satan against God (Revelation  12:4) long before the creation of Adam.  This verse indicates that this darkness refers to Satan's kingdom of darkness that is presently on this earth (You can check out Matthew 12:26 and Colossians 1:13 about this).  Surely this kind of battle is not waged individually but as the Body of Christ. I really appreciate the insight our brother gives on this matter!  I hope you can listen to the radio programs below on this.

Grandma's Gluten Free Applesauce Cake


A few weeks ago I made another batch of applesauce.  I had a few cups left over, and that made me think about my grandmother's applesauce cake.


  So I did a Google and found this recipe on Gluten Free Homemaker.  It was easy to make and modify to make gluten free. ,The batter tasted delicious.  My husband was licking out the bowl and the beaters, and that's a good sign we might have a winner here!  And yes with some whipped cream on it, it reminded me of how my grandmother used to serve her cake!

Grandma's Gluten Free Applesauce Cake

1.  Prepare dry ingredients - In a large mixing bowl put:
(1)  1 1/2 cups of rice flour and 1 cup of sorghum flour
(2)  Spices & leavening:  2 tsp. pumpkin pie spice, 1 tsp. salt, 1 1/2 tsp. baking soda, and 3/4 tsp. baking powder.


2.  In your mixing bowl put:
(1)  1/4 cup of softened butter and 1 cup of sugar (I used brown sugar) and beat a few minutes.
(2)  Add 2 eggs and mix together.
(3) Then add 1 1/2 cups of applesauce, 1/2 cup of water, and 1 tsp. of vanilla.
(4)  Slowly add the flour and beat until incorporated. I beat it for 3 minutes.
(5)  If you like, you can fold in 1 cup of raisins and 3/4 cup of  chopped walnuts.

3.  Bake at 350 for 45-50 minutes.

How Does God Get a Glorious Church in Ephesians 5:27?

 Did you know that glory is God expressed?  In the past the word glory made me think of dazzling sunshine.  So many times when I’ve read the Bible, I’ve thought I know that word, but after listening  to a message or reading a Life Study I realize my understanding was way too shallow. So glory is God  expressed but not just by God Himself. It may surprise you a bit (because it does me when I really think about it) that God  wants His glory to be expressed through man!  How can that happen?  In the introduction to Life Study of Ephesians Chapter 59 Witness Lee uses the context to tell us how:
 The only way God can have a glorious church is through Christ’s sanctifying, cleansing, nourishing, and cherishing. As we experience these things in a practical way the church becomes glorious (Lee, Witness. Life Study of Ephesians. Anaheim: Living Stream Ministry, 1978, Print ).
The context of this verse on the glorious church is God santifying the believers through His washing word, His nourishing and cherishing (Ephesians 5:26-29). Later he shares that as we come to the word, the Lord nourishes and cherishes us and bit by bit radiates His glory into us through our beholding His face (2 Cor. 4:6 and 2 Cor. 3:18.).  Somethings happening to us!  And this is a lot like what he shares in another message where he points out that this process of glorification is a lot like the metamorphosis of an ugly caterpillar into a beautiful butterfly (Page 481). Something within the caterpillar is consuming its old body and making a new one.  Wow, what a picture of what's happening to all of the believers of Christ!  So today our top priority is to come to the word of God and behold the Lord in His word!  

I really enjoyed listening to the radio broadcast of this message put on by Living Stream Ministry which is Program 52 - God's Desire for a Glorious Church. They really encouraged the listeners to read Watchman Nee's book The Glorious Church. I've read it years ago, but I'm planning  to read it again.  Did you know you can get this book as well as a free study Bible free of charge at Bibles for America?

Gluten Free Fall Pumpkin Curry Soup



  A few weeks ago one of the ladies from church brought this amazing pumpkin curry soup to our love feast that follows our Lord's Day meeting.  Everyone was wowing over it, and her husband brought me over a bowl. 


    She told us she added a bit more garlic and used coconut milk in place of the regular milk that was called for. And it was indeed a soup to wow over!

   A friend of mine had given me some squash from her garden and so I thought what a perfect thing to use to try out this recipe!  Anyway this recipe is a combination from two pumpkin curry recipes from Food.com  and another one from All Recipes.   All of us who had it were just like this is such good stuff! We liked it better than using pumpkin to make it! 


Gluten Free Pumpkin Curry Soup  - for 6-8


1. Prepare vegetables:
(1)  Rinse and prick a  small pumpkin or butternut squash and place it and 1+ cups of water into a pot  and cook until tender or crock pot and cook for 8-10 hours on high until tender. Note:  Or  if you don't have fresh pumpkin or squash, you can use 30 oz  of canned pumpkin.  You will get a little different flavor depending on which squash you use.  You can also add some chopped potato and carrot to the pumpkin.
(2) Chop 2 cups of onion
(2)  Mince 3 cloves of garlic

2.  Saute vegetables:
(1)  In another stock pot  put 2 T of butter into a pan and saute onion and garlic.
(2)  Stir in 1 1/2 T of Indian curry powder, 2 T of gluten free tamari,  1 1/2 t salt and 1 t pepper (or to taste) and cook for about a minute or so.

3.  Make the soup:
(1)  To that add 6 cups of chicken broth and the cooked pumpkin simmer it uncovered for 20 minutes.
(2)  You can use a hand held blender to liquefy the soup to your liking.
(2)  Stir in 3 cups of evaporated milk, half and half,  or coconut milk (I needed 2 cups because it was too thick) and allow it to warm up.
(3)  Taste and make any seasoning adjustments.  See if you need more milk, more curry or salt and pepper.

 When I made this again on December 3, 2013, I added a bit more of all the spics and 3/4 T more gluten free tamari.   This pumpkin curry soup has a bit of heat which is very warming on a cold fall or winter day. Today it was 35 degrees where I live, and this soup really hit the spot!

Seeing the Church as the Bride of Christ in Ephesians 5:32


    The brother in Christ  who married my husband and me used the classic  passage in Ephesians 5 on husbands and wives for our wedding message. He took Paul’s exhortation here to share on the precious truth that the church is the bride of Christ.  


   Witness Lee’s exposition of this truth in chapter 53 of the Life-Study of Ephesians makes this crystal clear.  He opens up by saying that as the first couple in the Bible,  Adam and Eve portray a complete picture of Christ and the church. ”ll put together a lot of the key excerpts  from pages 445-446 to show you:

"After God created man, He said, “It is not good that the man should be alone; I will make him a help meet for him” (Gen. 2:18). The animals and the fowl were brought to Adam, and Adam named them.  But for Adam “there was not found a help meet for him” (Gen. 2:20).  Within Adam there was the desire to have a counterpart, to have someone to match him….In order to produce such a counterpart, “the Lord God caused a deep sleep to fall upon Adam” (Gen.2:21). While Adam slept, the Lord took one of Adam’s ribs and used it for the building of a woman (Gen.2:22, Heb.).…In life, nature, and form the woman was the same as the man.…Adam knew that at last he had found his counterpart" (Lee, Witness. Life-Study of Ephesians. Anaheim: Living Stream Ministry, 1979, Print).

   I remember in my reading of the Life-Study of Genesis that  brother Lee (as he lovingly was called by all the ones he ministered to) had stated that Adam’s need of a helpmeet actually portrayed God’s desire for a helpmeet!   But how does God accomplish that?  It’s very touching that the Lord’s death on the cross was like Adam’s sleep.  He connects this to Revelation 21:2 where you read about the New Jerusalem.  He points out here that because Revelation is a book of signs, the New Jerusalem is also a sign.  It's a composition of all of God's chosen and redeemed ones from all the centuries, and they are the bride!  What  a wonderful revelation this is for all of God's people!

Tasty Gluten Free Filipino Chicken Adobo

A few weeks ago our Filipino friend (He came to our home for Bible study and dinner during his junior and senior years of college in 2007-09) came up to visit our family.  I always wanted him to teach me how to cook something Filipino.  Well the best he could do was send me a link for a recipe for chicken adobo from Amateur Gourmet.   This site filled me in that chicken adobo is an easy to prepare Asian chicken dish that is cooked in rice vinegar and soy sauce (gluten free tamari for us gluten free people) and is different from Mexican chicken adobo.  

I just checked this out on Food Network and they have the chicken marinade in the adobo sauce for 1-3 hours and then simmer it about 50 minutes.  I also like the recipe on  All Recipes that is for 3 pounds of chicken; they suggest you use 1/3 cup of rice vinegar and 2/3 cup of soy sauce, 2 T of minced garlic, 1 bay leaf and 1 T black pepper.  One of the comments from a Chinese-Filipino said they soften the strong vinegar flavor of authentic Filipino adobo by adding 4-5 T of rock sugar (just use brown), 1-2 star of anise, and 1/3 cup coconut milk. 

While eating this dish, a lot of us felt the rice vinegar flavor was a bit strong.  Ken told us it was very authentic and how Filipino's like to eat it.   Ken told me I could add more tamari to my plate, So I added a capful, and it came out great.  Next time I will tweak it according to some of the suggestions I added below.

Gluten Free Chicken Adobo

1.  Cut chicken:  Rinse 5 pounds of chicken legs/thighs/wings and then chop or cut them apart with kitchen shears.

2.  Prepare vegetables:
(1)  Separate two heads of garlic  (Foodnetwork's recipe just has 4 cloves of crushed garlic)
(2)  Cut 1 large onion into 8 wedges
(3)  Slice up 1/2 cup of ginger  (I noticed a lot of sites didn't include this--put the amount you like)
Note:  I asked Ken at dinner if I could have minced the garlic and ginger, and he said yes.  Like many Asian dishes, they are subject to a lot of personal touches.  I noticed a lot of people didn't touch the ginger slices or garlic. 

3.  Adobo sauce - Stir together in a glass bowl:
(1)   Pour in 1 1/2 cups rice vinegar    (Foodnetwork has 1/2 cup of rice vinegar)
(2)   Stir in 1/2 cup tamari                   (Foodnetwork has 1/2 cup of soy sauce (tamari) )
(3)  Add 10 peppercorns and 4 bay leaves.
Note:  Ken told us later at dinner that it is up to the cook if you want the adobo to be more sour (use the amount of rice vinegar listed here) or more salty (decrease the amount of rice vinegar and increase the amount of tamari).  Next time I am going to use 1 cup rice vinegar and 1 cup tamari.

3.  Prepare chicken adobo in Dutch oven:
(1)  Put 3-4 T of coconut oil into a dutch oven
(2)  Brown batches of chicken in the oil.  The recipe says the flavor of this dish is going to depend on how well you brown the chicken!    When it's done,  take chicken out and put in a covered dish.  One site said you don't have to take the chicken out, just add the vegetables and cook them together.
(3)  Add the onion, garlic, and ginger and cook until the onion is soft.
(4)  Then add the chicken back in.
(5)  Stir the sauce in the pot of chicken and vegetables.
(6)  Simmer the chicken for 40-45 minutes.
Serve with rice.
