And I've appreciated my Chinese friends sharing some of their recipes with me so I can make them for our international students. If you look at the list below you'll find her recipes for chow mein, BBQ chicken, cucumber salad, and Chinese yellow curry.
You'll find that this stir fry is delicious. I could tell by the way our Chinese students ate it that they appreciated a taste from home!
Rose's Authentic Stir Fried Chicken & Vegetables
For 6 to 8

1. Prepare chicken:
(1) Rinse and cube 2 chicken breasts and put in a medium sized bowl.
(2) Prepare the marinade below and then pour it over the chicken and put in the fridge for at least 30 minutes.
2. Prepare marinade - In a small bowl put:
(1) 1 T rice mirin, 1 T water, 2 tsp. gluten free tamari, and 1 tsp. sesame oil.
(2) Stir in 1 1/2 T of minced ginger, 1 tsp. salt, 1/4 tsp. black pepper, and 1 tsp. tapioca starch.
3. Meanwhile prepare vegetables - After washing them:
(1) Thinly slice 1 yellow onion.
(2) Slice 2-3 stalks of celery on the diagonal.
(3) Slice 2 carrots into thin sticks (I have a special kitchen tool that does this!)
(4) Thinly slice 1 green bell pepper.
(5) Optional veggies: Rose told me you can also use 1/2 of a zucchini cut into half moons, green beans, and bamboo shoots.
(6) Mince 2 cloves of garlic.
4. Stir-fry chicken - In a large wok or stainless skillet put 2-3 T of oil and stir-fry chicken until done. Put in a covered dish when done.
5. Stir-fry vegetables:
(1) Put 2 more T of oil into your pan and add the garlic and stir-fry for about 30 seconds. You don't want it to cook too long or it will taste funny my friend told me.
(2) Add the vegetables and stir-fry for 1-2 minutes.
(3) Mix 1/2 tsp.of salt, 1/2 tsp. black pepper, 1/4 tsp. of Chinese 5-Spice, 1 tsp. tapioca starch with 1/4 cup of gluten free tamari and 1/4 cup of water and add it to the pan and stir.
(4) Taste and make any flavor adjustments.
(5) Put the lid on and cook for 2-3 minutes or until crisp-tender.
