Gluten Free Sweet & Sour Chicken


With spring just around the corner, I'm starting to think of refreshing dinners like sweet and sour chicken.  This recipe is out of my daughter-in-law's family Cookbook. 

There were about four sweet and sour recipes, and this is a combination of them.   I don't usually do this, but I had fun adding different ingredients, tasting the sauce, and then adding something from another recipe to see how it tasted.  

This sauce is good! 



Gluten Free Sweet & Sour Chicken 
For 6 to 8

1.  Prepare chicken:    Rinse 2 chicken breast, and cut into bite-sized pieces..

2.  Prepare vegetables:
(1)  Slice 1 onion in half and then into thin slices.
(2)  Slice 1 green and 1 red bell pepper into thin slices.
(3)  Slice 2-3 stalks of celery on the diagonal.
(4)  Scrub and slice 3 carrots on the diagonal.  Then steam them till almost tender.

2.  Meanwhile prepare sweet and sour sauce - In a bowl put:
(1)  Drain the syrup from a regular can of chunky pineapple into a measuring cup. Then add enough water to equal  1 1/2 cups.  Pour it into a bowl.
(2)  Then add 1/2 cup of brown sugar 1/4 cup white vinegar, and 3 T gluten free tamari, 2 tsp. Better Than Chicken Bouillon, 1 tsp. Worcestershire sauce,  1/3 cup ketchup, 2 tsp. salt, 1 tsp. black pepper, and stir until combined.  
(3)  Taste and make any adjustments.

3.  Stir-fry the chicken & make the sweet and sour chicken:  
(1)  Put 2 T of oil in a skillet and stir-fry the chicken for a few minutes.
(2)  When almost cooked, add the onion, celery,  and green pepper and stir-fry for 2-3 minutes.
(3)  Add the sweet and sour sauce.  Then whisk together in a bowl 1/4 cup of rice flour with a bit of water and then add it to the pan to thicken the sauce
(4)  Add the carrots and cook for a few more minutes.
(5)  Taste and make any flavor adjustments.
