Do It Yourself Gluten Free Honey Almond Granola

  There's something about knowing what's going into what you're eating. And that's why making your own granola makes a lot of sense.  It's really not even that hard.  I've really come to enjoy making things from scratch!


 It's a great rainy day activity and it makes the house smell so yummy!  This recipe comes from my Heritage School Cookbook. I have often doubled and tripled this recipe!





Honey Almond Granola

1.  Prepare coating:  Time this so it is ready right when all the ingredients are ready for it--In a saucepan combine 1 cup of coconut oil  or olive oil and 3/4 cup of honey/agave and just let it warm up.  Take off the stove and add 1 tsp. of vanilla.


2.  Meanwhile warm up the oats  - In a 350 degree oven spread the oats on 3 baking sheets and let warm up for about 8 minutes.

3.  In a large mixing bowl stir together:
(1)   The warmed oats
(2)  1/2 cup of flax seeds  or something else! (instead of the wheat germ in the recipe)
(3)  1 cup of sliced almonds, walnuts, pecans or a combination
(4)  1 1/2 cup of coconut flakes
(5)  1/2 cup of raw sunflower seeds
Note:  What's great about granola is you can make a lot of your own substitutions.  And if it's a little too gooey, add a bit more of something to make it come out right!

3.  Prepare the granola:
(1)  Pour the oil/honey mixture over the oat mixture and stir until coated.
(2)  Put as much as you can on a baking sheet and bake at 350 for 20-25 minutes.
(3)  Stir every 7 minutes and continue baking and stirring until toasted.
(4)  Put the pan on a rack to cool before putting it in a glass container.  If you have a convection oven, you can put two pans in and switch them half way.  Watch them carefully though!

4.  Add some dried fruit:
(1)  1 cup of raisins (in place of walnuts in recipe or add some of both)
(2)  1/2 cup of chopped dates (or use some dried apples)
(3)  Any other fruit like craisins, dried blueberries, etc.
