Authentic Chinese Chicken & Leek Stir Fry

What do you do with leeks?  I don't know that many recipes for them.   And on top of that my neighbor gave me about six of them. So last week I asked  a Chinese friend's mother who is staying with me for two weeks what she did with leeks.  She smiled and her daughter translated for her that she made a stir-fry with them!  Of course, I asked her if she would show me how to make it.


So on Tuesday I watched and took notes as she deftly sliced up the vegetables and stirred up this marinade. She told me she uses most of the tops of the leeks, but you have to make sure the leeks aren't too old or they'll end up a bit chewy.







 Chicken & Leek Stir-Fry

1.  Prepare chicken breasts:  Rinse and thinly slice on the grain 2 chicken breasts.

2.  Marinade for chicken breasts - In a medium-sized bowl put:
(1)  3 T rice wine, 1 t salt, 1/2 t black pepper,  3 t tapioca starch mixed with 3 T of water, and 1 egg white.
(2)  Add the chicken and mix the chicken well with a wooden spoon.
(3)  Let it marinade for 30 minutes in the fridge.

3.  Prepare vegetables - After rinsing the vegetables:
(1)  Slice 4 carrots in 1" circles, then slice the carrot rings into thin squares. 
(2)  Slice 1 red pepper into small pieces.
(3)  Cut 4 leeks down the middle.  Line them up  (like you see her doing in this picture) and then slice them into 1 1/2" slices.  Jessica's mom also slices up the tender tops of the leeks, too.

4.  Stir-frying:
(1)  Put 2 T of coconut oil into a wok or large skillet and warm it up.
(2)  Add the chicken and stir-fry until done.
(3)  Put on a plate and cover while doing the vegetables.
(4)  Add 1 T of  coconut oil and add the carrots and stir-fry a minute or so.
(5)  Then add the leeks and red peppers and stir-fry for 2 minutes.
(6)  Mix 1/2 t of sugar in 1/2 cup gluten free tamari and 1/4 cup of water and add to the pan, put the lid on and cook for 2 minutes.

Serve over rice.
