Simple & Gluten Free Chocolate Cream Pie

This recipe has intrigued me.  I've had my Syre Elementary School Cookbook for about 20 years and I've never made this pie.  It was a black bottom pie that actually looked more like a chocolate cream.  I had an extra pie crust a few weeks ago and decided to make this pie with my  6 year old granddaughter.  We've been cooking together since she was about 2, and it's part of the special bond between us. 


I made this pie to celebrate the end of spring quarter for  our international students.   They loved it, but what's not to love about a decadent chocolate cream pie sprinkled with coconut?

   








 Simple & Gluten Free Chocolate Cream Pie

1.  Prepare a gluten free pie shell or buy a gluten free graham cracker crust pie.  I've seen both used for this recipe.

2.  Prepare custard for pie - You will use a double boiler for this:
(1)  Scald 2 cups of milk.
(2)  Bring the water in the bottom of the double boiler to a boil.
(3)  In the top pan stir together 1/3 cup white rice flour,  1/3 cup of Hershey's cocoa, (something extra I saw on Martha Stewart's recipe that I added) 1/3 cup of white sugar, 1/8 t salt.
(4)  Gradually add the scalded milk and stir this mixture constantly while it thickens, about 15
minutes. 
(5)  Add 1 bar of German sweet chocolate. (I used two  2 oz. bars of bittersweet Hershey) 
(6)  Beat 2 egg yolks slightly in a medium sized bowl, and then pour a bit of the cooked mixture into them slowly stirring constantly.  
(7)  Return mixture back to the double boiler and cook about 2 minutes longer stirring constantly.
Note:  The recipe says this mixture will curdle if overcooked. 
(8)  Remove from stove and cool.
(9)  Add 1 t of vanilla and cool.

3.  When custard is at room temperature pour it into the prepared pie shell. 

4.   Refrigerate pie at least 6 hours before serving.

5.  Whip up 2 cups of cream with 4+ T of sugar and spread over the pie before serving.
