I haven't made one in awhile, but with the all the berries we've been picking, I decided to make one for our guests from Taiwan. She helped me whip up the egg whites and decorate it when it was done.
Instead of using whipping cream, I used whipped coconut cream. You can use a lot of combinations of seasonal fruit, but strawberries and kiwis are a must! The pavlova here is decorated with kiwis, strawberries, blueberries and blackberries. And yes, everyone oohed and ahhed!
Triple Berry Pavlova
1. Preparing the egg whites for pavlova:
(1) Whip up 4 egg whites with 1/8 t of salt until stiff but not dry, about 1 minute.
(2) Beat in 4 T of water
(3) Slowly add 1 cup of sugar (I used 3/4 cup) slowly beating approximately 2 minutes.
(4) Add 3 T of tapioca starch, 1 t white vinegar, and 1/2 t of vanilla and beat 30 seconds to a minute.
2. Preparing the pavlova for baking:
(1) Put a piece of parchment paper onto a cookie sheet.
(2) Then turn out the pavlova and using a spatula make a 10-12" circle. Pile up the edges like you see here.
(3) Bake at 275 for 1 1/2 hours. Check it at an hour if your oven runs hot. Mine was lightly browned in that hour.
3. Meanwhile prepare berries and whip up the cream:
(1) Rinse and slice strawberries.
(2) Rinse blueberries, raspberries, or blackberries.
(3) Slice 2 kiwis
(4) Whip up 1 cup of cream or coconut cream (without any liquid) until stiff. Add 2-3 t of sugar.
4. Prepare the pavlova:
(1) Put the pavlova on a serving platter.
(2) On the cooled pavlova spread the whipped cream.
(3 Make a beautiful pattern with your berries and kiwis.
