Delicious Gluten Free Potato Latkes

     When my girls were young, they liked reading Sydney Taylor's series The All of a Kind Family. In one of her books she talks about their family's Hanukkah traditions, and of course she spoke about making potato latkes.  

   As you read the story, you could almost smell the potato latkes frying on the stove.  They sounded so good I found a recipe so I could make them.  This one came from the flier in my sweet potato bag. 


Latkes are a lot like the potato pancakes my grandmother used to make, but they're crunchier. Traditionally they're served with  sour cream and applesauce. That may sound like a strange combination, but it is  delicious! 



  Delicious Potato Latkes


1.  Prepare potatoes:  

(1)  Scrub 3-4 potatoes (2 pounds worth) but do not peel because the skins add flavor and vitamins.
(2)  Grate 1 medium onion.  Grate the potatoes and onions TOGETHER. This keeps the potatoes from turning dark. (A story about Hanukkah suggested this.)
(3)  Allow this mixture to drain a bit then squeeze out the remaining liquid with your hand or use a napkin.
(4)  Put this in a glass bowl.
(5)  Add 1/2 t salt,  1/4 cup of rice flour, and 1/4 t baking powder.




2.  Cooking the latkes:

(1)  Put 4-5 T of coconut oil on the bottom of a large skillet and let it get hot. (You may need to add more as you make them.)
(2)   Drop by quarter cupfuls onto a hot, well oiled skillet and flatten into a nice round pancake.
(
3)  Fry until golden and crispy.
(4)  Drain on paper towels.  (Cover with foil and you can keep them extra warm by putting them on a platter in the oven as you make them)


Serve potato latkes with sour cream and applesauce.
