Huevos Rancheros - A Fantastic South of the Border Breakfast

 I learned how to make huevos rancheros years ago when I saw a recipe in a cookbook.  It's mostly a matter of preparing the ingredients and then assembling them just right.  One reason why I like huevos rancheros is that they're a delicious way of packing in more protein into your breakfast.  


And it's also a great way to use up leftover refried beans.   I like all the flavors that come together in huevos rancheros. 

Huevos Rancheros


1.  Prepare pintos/black beans:  Prepare beans according to your favorite bean recipe.

2.  Prepare corn shells:  Put a bit of oil in a cast iron skillet and warm up the tortillas for a few minutes until soft.

3.  Warm enough tortillas for the number of people you are serving.

4.  Grate 2+ cups of cheese

5.  Cook eggs according to your preference.  I usually poach them.

6.  Assemble huevos rancheros:
(1)  Put a few spoonfuls of beans on the bottom of the corn tortilla
(2)  Put an egg on top
(3)  Add salsa and sour cream
(4)  Top with cilantro and avocado slices
