A New Way to Eat Your Oatmeal! Gluten Free Baked Oatmeal

   I love oatmeal.  I never get tired of it.  A few years ago I had baked oatmeal for the first time at my daughter-in-law's home in Winnipeg.  I had two pieces because it was so good!  I have made it with blueberries, blackberries, and apples and raisins. 

 Our daughter-in-law told us there's two ways you can eat this stuff: Her family likes this best with milk poured over it, but we like to also eat it like a coffee cake. 

Gluten Free Baked Oatmeal

1.  Prepare oats:  Mix 3 cups of gluten free quick oatmeal (I've also used old fashioned oats) and let it sit for 5 minutes.

2.  In a large bowl mix together:
(1)  1/3 cup of melted butter (I've used oil)
(2)  1 cup of brown sugar
(3)  Whisk in 2 beaten eggs
(4)  Add leavening & spices:  2 tsp. baking powder, 1 tsp. salt, and 1 tsp. cinnamon.

3.  Add fruit - Stir in 1 cup of a fruit of your choice:
(1)  blueberries
(2)  1 diced apple and 1/2 raisins
(3)  blackberries

4.  Grease a 9 x 13 pan and bake at 350 for 25-30 minutes.
