Amazing Gluten Free Apple Cinnamon Dutch Baby

Years ago a friend gave me a recipe for making a Dutch baby, but I lost it.  My daughter and I made these a few weeks ago, and they were fantastic.  I'm using the Dutch Baby Recipe from my daughter's home ec book and adding what I learned about adding apples and cinnamon.

   One thing I noticed right away was it didn't deflate as much as others I've made.  It might be the apples.  It's almost tragic when you see this fantastic looking puffy Dutch baby come sailing out of the oven to only have it deflate in minutes before your very eyes.
When this first happened to me, I thought I made them wrong!  These were perfect with maple syrup on them with some yogurt on the side.  They tasted like apple fritters.  Totally yummy.

Gluten Free Apple Cinnamon Dutch Baby

1. Prepare fruit:  
(1)  Dice 2 granny smith apples.  (I used yellow delicious and they came out great!)
(2)  Put in a bowl with 2 tsp. cinnamon and mix.

2.  Prepare dry ingredients - In a small bowl put:    1 1/2 cups of gluten free flour 

2.  Cook apples:  Put 1-2 T of butter into a cast iron skillet and cook apples for 4-5 minutes or until tender.

3.  Meanwhile beat up eggs and milk in a large mixing bowl:
(1) 6 eggs and beat until they are a lemon color.  
(2)  Then gradually beat in milk  (I usually use coconut milk)
(3)  Then add the dry ingredients and beat until combined
(4)  Finally put in 1 tsp. of vanilla extract  and beat it all together for 30-45 seconds. (She suggests using 1 T of vanilla but I used less)


4.  Prepare dutch baby:
(1)  Add 4 more tablespoons of butter to a 9 x 13 pan and let it melt.
(2)  Then pour the egg/milk mixture over the apples.

5.  Bake Dutch baby at 400 for 22-25 minutes.
