Easy to Make Gluten Free Waffles

  When the grandkids spend the night, I like to cook Saturday morning breakfast with them.  A few weeks ago when they woke up, I told them we were going to make some waffles.  Of course they were excited; they love to cook with me.  

    This recipe comes from a fundraiser cookbook I picked up at an elementary school many years ago.  I only had to switch out the flour.  These waffles are great especially if you serve them with yogurt and fruit or jam.   


 Easy to Make Gluten Free Waffles

1.  Bowl #1: Prepare dry ingredients - In a large bowl put:

(1)  1/3 cup rice flour, 1/3 cup sorghum flour, and 1/3 cup tapioca starch/flour
(2)  Add leavening and sugar:  Stir in `1 1/4 tsp. baking powder, 1 tsp. baking soda, 1/4 tsp. salt, and 1 tsp. sugar.

2. Bowl #2:  Whisk 3 egg yolks Then add to that 2 cups of sour cream/yogurt, and 1/2 cup milk.

3. Bowl #3:  Beat 3 egg whites until they are stiff, add 1/4 tsp. of cream of tartar.

4.  Combine ingredients: 
(1)  Slowly add the egg mixture from Bowl 2 to the flour mixture in Bowl #1.
(2)  Then fold in the egg whites.

5.  Cook the waffles according to your waffle iron instructions and enjoy!!
