This recipe is a modification from my Heritage School cookbook and my Better Homes. Over the years I have made different kinds of fillings to go with them, and I've included under this recipe some of my favorites.
Incredible Gluten Free Crepes
This makes 6 large crepes
1. Mix dry ingredients: In a medium size bowl mix together 1/2 cup of rice flour, 1/2 cup of sorghum flour, 1/2 cup of tapioca flour, 1 tsp. sugar, and 1/4 tsp. salt.
2. Add eggs and milk: Add 2 eggs ONE at a time beating well after each. Then add 1 1/2 cups of milk to make a thin batter.
3. Cooking crepes:
(1) Put 1 T of butter in a skillet; when skillet is ready add about 1/4 cup of batter to the hot skillet
(2) Tip it to the sides so that the batter thins out and cook about a minute until the edges start to dry,
(3) Then flip over and cook about 30 seconds or until done.
(4) Stack on plate and keep in warm oven or cover with a towel. Extras can be stored in the frig for about 2 days.
4. Fill with fruit and whipped cream, yogurt and fruit or just fill with your favorite jam and roll up.
Crepe Fillings
Cherry Sauce
Drain the cherry juice from a jar of Trader Joe's cherries into a saucepan and mix with 2 T of cornstarch. Cook until this mixture begins to thickens. Add the cherries and cook for 2 more minutes. Add a few tablespoons of sugar/agave if it's not sweet enough.
Triple Berry Sauce
In a saucepan put 1 cup each of strawberries, raspberries, and blueberries. Add 2 cups of boiling water and 1/4 cup agave or a sweetener of your choice. Stir 3 T of tapioca (or corn) starch into 1/4 cup of water and stir the sauce until thickened.
Mango yogurt
Dice up 1 mango and mix with 2 cups of vanilla yogurt. You can mix any type of fruit you prefer with yogurt for a yummy filling.
