Family Favorite Gluten Free Buttermilk Pancakes


    I was  thinking about some buttermilk pancakes.  You know the kind that melt in your mouth.  And with blueberries in season, here's a delicious recipe that combines both!  


   This great recipe comes from  a cookbook my daughter's home ec teacher gave her students.  What a great resource, and whenever I use it, I experiment with my flours to see if it comes out.  I only changed out the flour for 2 cups  for 2/3 cups of rice, sorghum, tapioca flours, and they came out great!

GLUTEN FREE BUTTERMILK PANCAKES


1.  Combine dry ingredients - In a large bowl whisk together:
(1)  2/3 cups of rice flour, 2/3 cups of sorghum flour, 2/3 cups of tapioca flour
(2) Stir in leavening:  2  tsp. baking powder, 1 tsp. baking soda, 1 tsp. salt, and 2 T sugar.


2.  Combine liquid ingredients - In a medium size bowl:
(1)  Beat together 2 eggs
(2)  Stir in 2 cups of buttermilk and 4 T of olive oil.

3.  Combine egg/buttermilk mixture to flour:   Slowly stir in the egg/buttermilk mixture with the flour mixture stirring just until all the ingredients are moistened.  Stir in 1 cup of blueberries.

4.  Cook pancakes:  Lightly grease your griddle and use about 1/4 cup to make the pancakes.  This makes about 18-20 4" pancakes.
