Hash Brown Egg Casserole

     Egg casseroles make company breakfasts so easy.  I like this recipe because it uses hash brown potatoes as the crust so I don't have to worry about making a flour type crust.  It's also a great way to use up cold baked potatoes. 

  And mild chilies gives it a Mexican twist and a pleasant kick.  This recipe comes from a friend's cookbook;  she served it at a Christian student's breakfast several years ago. I have made it several times since then.  

HASH BROWN EGG CASSEROLE

1.  The day before prepare potatoesYou can buy a package of hashed browns or you can scrub 2 large potatoes, cut them in half and steam them. Let them cool then refrigerate.  The next morning grate them onto a plate. 

2.  Prepare eggs:  
(1)  Whisk together 6 eggs and 2 cups of milk.
(2)  Add spices:  1/2 tsp. oregano, 1 tsp. salt, and 1/4 tsp. pepper. 
(3)  Grate 2 cups of cheddar cheese.
(4)  Optional:  Add a can of mild green chilies.  These chilies make it really delicious!

3.  Prepare veggies: 
(1)  Slice 3 green onions
(2)  Mince 2 cloves of garlic.
(3)  Stir into the egg mixture. 
Optional:  Slice up a tomato to lay across the top of the casserole before baking.

4.  Assemble casserole:
(1)  Put grated potatoes on the bottom of a glass 9 x 13 pan.
(2)   Pour the egg mixture over it.  Top with tomato slices if you like.
(3)  Bake at 350 for 25 minutes.  Insert a knife into the center to check  and make sure it's done.
