One of my cookbooks said the secret to making scones was to use cold butter, to work quickly, and to handle the dough as little as possible. It also said the dough isn't going to be smooth looking but actually will be a bit rough. It's important to also pat the dough into a circular shape and not roll it out.
Thanksgiving Gluten Free Pumpkin Scones
1. Put dry ingredients in a large bowl:
(1) 1 1/2 cups of brown rice flour, 1/2 cup of potato starch, and 1/2 cup of tapioca starch
(2) Add spices & leavening: 1/8 tsp. cloves, 1/8 tsp. ginger, 1/2 tsp. cinnamon, 1/2 tsp. pumpkin pie spice, 1/4 cup brown sugar, 2 tsp. baking powder, 1/4 tsp. baking soda, and 1/4 tsp. salt.
(3) Stir until combined.
2. Put 1/2 cup of cranraisins in a bowl with warm water to cover for 10 minutes. Drain and set aside. Chop 1/2 cup of pecans.
3. Cut in 1/2 cup of butter with a pastry blender until the crumbly.
4. Add drained cranraisins and pecans.
5. Put liquid ingredients in a medium size bowl:
(1) 7 1/2 oz. of canned pumpkin
(2) 1 egg at room temperature or sit in a bowl of warm water for a few minutes and 1/4 cup cold milk
(3) Stir until well combined.
6. Combine ingredients: Slowly add the pumpkin mixture to the flour mixture stirring with a fork until moistened.
7. Turn dough out onto lightly floured bread board and knead 3-4 times.
8. Divide into two balls and pat into 5" circles and cut each of them into 6 pieces. Or you can bake the scones on parchment as a circle which I did another day.
9. Baking scones: Lay scones on a greased baking sheet and bake at 400 for 15 minutes. You can make a glaze for these if you like, but I'm always trying to cut down on sugar, so I didn't make the glaze.
