Mark's Famous Chocolate Chip Cookies - Made Gluten Free!

    Probably every kid has grown up loving chocolate chip cookies and milk.  These chocolate chip cookies are from my daughter-in-law's family reunion cookbook.  I have known her Uncle Mark since his childhood, and I have heard about his chocolate chip cookies. 
 Yesterday I halved the recipe (and that's what I printed below) and made some substitutions.  As you can see in the pictures, my grandkids love to help me bake.  We gave them the out of the oven taste test, and yes even though gluten free these are amazing cookies!








Mark's Famous Gluten Free Chocolate Chip Cookies

1.  Prepare dry ingredients - In a large bowl put:
(1)  1 cup rice flour, 1 cup sorghum flour, and 1 cup tapioca flour
(2)  Stir in 1 tsp. baking soda


2.  Cream butter and sugar - In a mixing bowl put:
(1)  1 cup of butter and  1 1/2 cups of sugar (half white and half brown) in a stand up mixer for 5 minutes.
(2)  Then add 2 eggs and 1 tsp. vanilla and cream until creamy about 2 minutes.

3.  Combine ingredients:  
(1)  Slowly add the flour mixture to the creamed mixture.
(2)  Stir in 12 oz of chocolate chips.

 
4.  Baking cookies:  Put 1 tablespoon of dough on a cookie sheet  (We rounded them into  balls and then flattened them a bit with the palm of our hand)
and bake at 350 for 10 minutes. Put on a wire rack to cool.

Outstanding Gluten Free Oatmeal Pancakes

  Last Saturday my granddaughter came into our room and asked me if we could make oatmeal pancakes with chocolate chip smiley faces for breakfast.  I thought that was a
yummy idea, and so we started to get everything set up.

  Soon we were joined by her brother, and together we made breakfast before everyone woke up.  What a fun surprise it was for everyone else! 


   This recipe is from my Heritage School cookbook. They were yummy with my homemade apple butter, blackberry, and raspberry jam!   These pancakes are another good way to get more cholesterol fighting oatmeal into your diet.

Gluten Free Oatmeal Pancakes

1.  Soak oatmeal:  Put 2 cups of uncooked oatmeal into a bowl, add 1/2 tsp. of baking soda and 2 3/4 cups of buttermilk. 

2.  Prepare dry ingredients - In a large mixing bowl put:  1/2 cup of rice flour, 1/2 cup of sorghum flour, and 1/2 cup of tapioca flour, 2 tsp. baking powder, 1 tsp.salt.
3.  Prepare liquid ingredients - In a medium sized bowl:
(1)  Beat 2 eggs
(2)  Then add 1/3 cup of oil
(3)  Then stir in 1 T of maple syrup or agave


4.  Combine ingredients:  Gradually add the egg/oil mixture and the oatmeal to the flour mixture and blend until it is smooth.

5.  Frying pancakes:  Lightly grease your frying pan with some oil, and for each pancake pour 1/4 cup of batter.  If you use a stainless skillet like I do, you will need to repeatedly grease it with a napkin dipped in oil.

Why is Faith like a Camera in Galatians 3:6-9?

                          
       Most believers know what faith is because after all that's what saved us.  But I read a definition of faith in chapter 18 of the Life Study of Galatians that touched me in a new way. "Our faith is the reflection of the grace of Christ" (Lee, Witness. Life-Study of Galatians. Anaheim: Living Stream Ministry, 1979, Print).  

I've been reading through the book of Genesis, and Galatians 3:6 is a quote from Genesis 15:6. The background of this verse is Abraham is old and without a child, and God tells him to look at the heavens and count the stars and tells him that's how many descendants he would have. The very next verse is:  "And he believed Jehovah, and He accounted it to him as righteousness."  

    Where did Abraham's faith come from? As Witness Lee shares in these marvelous Life- Study messages, Abraham was actually under a hearing of faith like Galatians 3:2 talks about (that was last week's blog). God's speaking infused faith into his heart to believe God's promise.  I have always enjoyed Witness Lee's illustration in Chapter 20 page 175 of how a camera describes our faith:
"We may also say that faith is a photograph of the divine scenery.  Through such faith we become true sons of Abraham.  When we believed in Christ, an organic union took place. The divine life entered into us, and we were born of God through faith.  As our faith photographed the divine scenery of grace, something of a real and substantial spiritual nature was infused into us" (Lee, Witness.  Life-Study of Galatians. Anaheim: Living Stream Ministry, 1979, Print). 

   I really like this illustration because it makes faith something real and active. Whenever we hear or read God's word, our spirit of faith is going click, click--it's taking pictures like a camera of the spiritual scenery.  Something is getting impressed into our heart that literally infuses us with faith in what God is speaking.  This never becomes old to me, it amazes me.  This is why it's so important for each of us to read God's word every day and be in fellowship with other believers!!

Get More Probiotics! Make Some Deluxe Japanese Miso Soup (Kenchinjiru)


  Miso is good for you.  Do you know why I like it? Because it's a great food source of probiotics.  But I wanted to find out what else it was good for so I  Googled it.  Everything I wanted to know about miso got answered on this site 10 Benefits and Uses for Miso.  Now that I know more, I will definitely be making it more often now!

  Anyway I made kenchinjiru last summer when I had two Japanese student boarders (sorry I forgot o jot down the website then).  They were delighted I had made it for them.
   
   Last week I made gluten free yakisoba and thought it would be fun to make an entirely Japanese meal.  I'll post the adzuki bean stir fry next week.  I told my son-in-law that I could eat this meal all over again it was that good!  


Deluxe Miso Soup - Otherwise Known by the Japanese as Kenchinjiru

1.  Prepare chicken stock:  Put chicken back/breast bone into a soup pot with 10 cups of water. Add 1 T of rice mirin and 1 T salt and cook for 1 hour.  Skim off any foam on the top of the soup.

2.  Meanwhile prepare vegetables:
(1)  Slice or chop 1 onion.
(2)  Slice 2-3  carrots on the diagonal.
(3)  Slice 2 stalks of celery on the diagonal.
(4)  Slice 1 daikon radish in rounds or cut in half.
(5)  Slice 2 potatoes in rounds or in wedges.
(6)  Slice 2-3 green onions to garnish the soup

3.  Combining ingredients:
(1)  Stir into the chicken stock 1/2 cup of red miso that's been dissolved in a bit of water.
(2) Then add vegetables to the pot of chicken stock and cook on medium low until tender.
(3)  When they're tender, add 10 oz of cubed tofu (We have had it with and without), 3 T sesame oil, 2 T gluten free tamari, and cook for a few more minutes or turn down to a simmer until you're ready to eat. (I really like to let this soup simmer to make it richer tasting)
(4)  Taste and make any adjustments.

Yummy Vegetarian & Gluten Free Tom Yum Soup

I finally made this recipe last week.   It was on my list of Thai recipes to try out. Actually it was a combination of two Tom Yum recipes.  Our Thai student gave it a thumbs up, and we were all like wow this is good!

     It is a bit spicy, but you can control that by how many pepper pods you put in.  You can always put some Sriracha on the table if someone wants more heat.  To go along with this soup I made some stir fried bean threads and an Asian salad. 

Vegetarian Tom Yum Soup

1.  Prepare veggies:
(1)  Add 1 stalk of lemon grass (the white part) minced.
(2)  Mince 4 cloves of garlic.
(3)  Slice 2 green onions.
(4)  Slice 1 cup of shitake mushrooms (I used button ones).
(5)  Chop 1-2 cups of bok choy.  Chop the white stem.
(6)  Slice 1 cup of cherry tomatoes in half.

2.  Prepare chicken stock:
(1)  Put 1 chicken back/breastbone into a pot with water to cover.  Skim off foam and then drain.
(2)  Add about 8 cups of fresh water, 1 T rice mirin, 1 thumb size piece of ginger minced, 2 green onions sliced in 1" pieces, 2-4 red pepper pods,  and  1 T of salt.
(3)  When it comes to a boil, turn the heat down and let it simmer for 2 hours.

3.  Mix fish sauce & lime juice - In a small bowl mix the following: 

1 T of Sriracha chili paste, 1 T fish sauce, and 2 T freshly squeezed lime juice.

4.  During the last 30 minutes:
(1)  Add the lemon grass and garlic and let cook 5 minutes.
(2)  Then add the mushrooms and cook 5-8 minutes
(3)  Stir in the bok choy and tomatoes and cook for 2 more minutes.  The bok choy should be on the crisp side.
(4)  Reduce the heat and stir in the fish sauce mixture.

8.  Optional:  Add cubed tofu if you like.

Why Did Paul Emphasize the Hearing of Faith in Galatians 3?

        There are two sides to everything.  Even the Bible has two parts--the Old Testament and the New Testament. Have you ever thought that these two testaments show two different ways of relating to God?  In the Old Testament man's relationship with God was centered on his keeping the law, but in the New Testament man's relationship with God is based on his having faith in Christ.

  I learned from my reading Chapter 14 in the Life-Study of Galatians that covers chapter 3 of this Epistle.  In verses 2 and 5 Paul is contrasting these two dispensations:  This only I wish to learn from you, Did you receive the Spirit by works of law or by the hearing of faith? And then a few verses later Paul says:  He therefore Who is supplying to you the Spirit and doing works of power among you, is it by the works of law or by the hearing of faith?  Witness Lee points out on page 119 that in these two verses you can also see the two sides of Gods New Testament economy:
Gods New Testament economy is a matter of supplying the Spirit and receiving the Spirit.  On Gods side, He supplies the Spirit; on our side, we receive the Spirit. The supplying of the Spirit and the receiving of the Spirit do not take place once and for all.  On the contrary, they are continual.  According to 3:2 we have already received the Spirit. But according to 3:5, God continues to supply the Spirit to us.  Day by day God supplies the Spirit, and day by day we receive this supply of the Spirit (Lee, Witness. Life-Study of Galatians. Anaheim: Living Stream Ministry, 1979, Print).
     I really like that it is a continual receiving, it is not a once for all event As I was thinking about this, I realized God's always supplying, but am I receiving?  In both of these verses I'm seeing that both my initial receiving of the Lord and my daily receiving a supply of grace hinge on my hearing of faith. From my experience I know that when I read the word or hear a word of ministry, I come under a hearing of faith. Something sparks in my heart.  In this message Witness Lee shares that when we hear the word of God, faith is infused into our heart and we spontaneously believe it. This word showed me how critical our hearing God's word and ministry are!!

   I can't imagine a BBQ without a potato salad.  This is a delicious potato salad that I believe came from my mother-in-law who is by the way is a tremendous cook.   Her potato salad has a great combination of flavors with just the right amount of crunch. 

   A good friend of mine told me that the secret ingredient in her potato salad was balsamic vinegar--just a tablespoon, and so I have added that here.   Like many salads, there's plenty of room for you to add your own special touches.

Grandma's Perfect Potato Salad


1.  Prepare potatoes: 
(1)  Put 6 medium potatoes into a pot with water to cover and boil until they are tender.  (Sometimes I cube the potatoes ahead of time, but I find cooking them whole and slicing them afterwards is easier and I don't end up with mushy potatoes because I forget to check on them.)
(2)  Let the potatoes cool.
(3)  Slice the potatoes lengthwise and then across to cube them.
(4)  Put potatoes into a salad bowl.

2.  Hard boil 4 eggs.

3.  Prepare veggies:
(1)  Dice 1 onion
(2)  Dice 3 stalks of celery
(3)  Dice 3-4 pickles
(4)  Optional:  Slice 1/2 a can of olives

4.  Make potato salad dressing - In a medium bowl put:
(1)  1 1/2 cups of mayonnaise and 1 T yellow prepared mustard
(2)  Stir in seasonings:  2 1/2 tsp. salt, 1/2 tsp. black pepper, 2 tsp. Costco No-Salt Seasoning or something similar, and 1/2 - 1 T balsamic vinegar
(3)  Add 3 of the hard boiled eggs and use a fork to break them up.
(4)  Then stir in the chopped vegetables and blend until completely mixed together like an egg salad sandwich

5.  Combine ingredients:
(1)   Stir the potato salad dressing into the cubed potatoes. 
(2)  Taste and make any adjustments, usually a little bit more salt, pepper, mustard, or balsamic is what I usually end up doing.
(3)  Slice the last hard boiled egg and arrange it on top of the potato salad.  Sprinkle with paprika.
(4)   Put salad into the refrigerator until ready to serve.
